
INGREDIENTS
- 400g Dates
- 200ml Water
- 75g Softened Butter
- 50g Dark Sugar
- 2 Tbsp Honey
- 2 Eggs
- 150g Flour
- 1 tsp Baking Soda
- 2 tsp baking powder
- 9×9 Pan
- 125ml Heavy Cream
INSTRUCTIONS
- Mush Dates then steep in 200ml Water for 30 minutes
- Leave Butter out to become soft
- Whip butter into brown sugar
- Add one egg at a time to mix
- Add Honey to mix
- Mix in all the dry ingredients to mix – time critical to go into the oven
- Add to Dates mix
- Poor into a 9×9 Pan
- 180C 20-35 minutes depending on dryness
- Poke holes and then add caramel sauce
Caramel Sauce
- 70g Granulated Sugar + speck of water
- Heat to setting 7, the sugar will melt if it bubbles, remove the heat
- Once it is all melted start adding the heavy cream
