Well, Tina was always going to be Catholic. All that repression religion and parochial school weirdness was just too good to pass up. Since this was always meant to be a 'meeting of two worlds' story, what would be the opposite of a zealous Roman Catholic, but an Orthodox Jew? So, that's the simple answer; I was looking for the two most opposite worlds I could throw together.
