Linguine alla Carbonara

A recipe out of one my many cookbooks, we decided to carry on with it and add a few more ingredients to the pan~
This recipe is pretty easy to make, and isn't too heavy on the amount of ingredients! Definitely something for us poor college folk ^^

[i][b]Linguine alla Carbonara[/b][/i]
[b]Ingredients[/b]
-1 lb dried linguine
-1 tbsp olive oil
-8 oz pancetta or lean bacon, chopped
-3 cloves of garlic, diced
-1 medium tomato, chopped
-1/2 of a large onion, chopped/diced
-4 eggs
-1/4 cup heavy whipping cream [i](recipe calls for light cream, but the heavy has a much bolder flavor)[/i]
-1/4 grated or shredded Parmesan cheese
-salt and pepper TT (to taste)
[b]Directions[/b]
1. Bring a large pan of slightly salted water to a boil.
2. Add the pasta and return to boil, cooking for 8-10 minutes, or until tender.
3. Meanwhile, heat the olive oil in a skillet. Add the bacon/pancetta, garlic, onion, and tomato. Cook over medium heat for about 8-10 minutes, stirring quickly.
4. Beat the eggs with the cream in a small bowl and season to desired amounts with salt and pepper.
5. Drain the pasta and return to pan, adding the egg/cream mixture and half of the Parmesan cheese. Stir well.
6. Mix in the bacon, onions, garlic, tomato, and the rest of the Parmesan to the pasta.
7. Enjoy!

This dish has become a staple for my home. It's quick and easy, both on the time it takes and on your wallet, and can easily be expanded with the addition of a few items. Try adding sauteed mushrooms with it!
