Herb Crusted Pesto Salmon
Ingredients
1 filet of Salmon (perferably deskinned fully)
2 tbs of mixed herbs (I used Gugi's Miracle Blend Salt Free Herbal Seasoning)
1 tsp garlic powder
1 tsp lemon (or lime) juice
1 jar pesto sauce
Paremsean Cheese
(double ingredients for more salmon filets)
Preparation
In a large bowl, mix herbal seasoning, garlic powder and lemon/lime juice. Spread herbal mixture over the salmon. Preheat and grease frying pan over medium heat on stove.
Cooking
Fry Salmon over medium heat 7-8 minutes per side, until fully cooked (no pink flesh visible). Set Salmon onto plate and spread pesto sauce over it, then sprinkle Parmesean Cheese over top.
Serves 1 (or more if you've added more filets). Goes well with asparagus (or green beans) and rice (or noodles).
