Saddlehill is farmed biodynamically — every element from the vines to the orchard to the flock plays a deliberate role. The sheep graze the rows, the bees cross-pollinate the trees, and the greenhouse feeds the kitchen every week of the year.

Sheep in the vines
Our flock grazes directly between the vineyard rows — controlling weeds naturally, aerating the soil, and fertilizing as they move through each block. No herbicides, no machinery during grazing season.
The flock rotates on a seasonal schedule timed around bud break and harvest. Between cycles, cover crops replenish the soil — a closed-loop system that has defined biodynamic viticulture for generations.
Healthier soil microbiome, reduced compaction, and measurably lower input costs compared to conventional vineyard floor management.
Over 600 fruit trees
Apples, pears, stone fruits, and more — planted across the property. Fruit moves straight from tree to kitchen and cellar, with surpluses pressed, preserved, or folded into our winemaking.

Our wine grape vines are the heart of Saddlehill — 27 acres farmed biodynamically, with the sheep grazing between rows each season. What grows here becomes what's in your glass.
Traditional crops
Potatoes, zucchini, and seasonal vegetables grow in traditional tilled rows. These are the workhorse crops — high yield, deeply versatile in the kitchen, and a direct link to the farmhouse cooking tradition this property was built on.
Year-round growing
Our glass greenhouse extends every season while our indoor hydroponic system produces leafy greens and microgreens continuously. The kitchen never waits on weather — fresh herbs and greens every week of the year.
