This PR updates the CI workflow in `.github/workflows/ci.yml` to improve the setup and management of iOS simulators. The change includes - Enhanced error handling - Better diagnostics - Configurations for M-series Macs. This change is similar to what we in `.github/workflows/e2e-matrix.yml` so the result should be consistent across workflows. (cherry picked from commit ce9ff92)
