The field tag "-" wasn't documented in README. This change updates the README to mention it in a few places and adds example code from: #652

The field tag "-" wasn't documented in README.
This PR updates the README to mention it in a few places and adds example code from #652.
NOTE: The
encoding/jsondocs describe it as a "special case" and "field tag" rather than tag "option", so I did the same in this PR.Thanks @theory for spotting this omission and opening issue! 👍
