This would be really easy to write down if I had my recipe on me but I left it at home... Let's see! Last time I made this I used a cabbage, a handful of salt, a liter of water, chili powder, about a full can of fish sauce, a cup of sugar, six spring onions, five cloves of crushed garlic, grated ginger -- enough to fill a cup, a pear that I cored and peeled, one radish -- the long and white type, two types of onions: the right side of a brown onion and six spring onions sliced... I think that's all, anyway!

First you have to cut the cabbage! Halves or quarters are best. The outer leaves have to come off so if you cut the stem, most of it will fall off.

Then the water and salt are stirred together. Normally I get aniki to do this part since it makes my fingers really pruney! But anyway, once you plunge the cabbage in the water, separate each layer! This one time aniki didn't do it right and the texture was all wrong!

Drain the water and sprinkle the salt! And this is important so really listen: the salt has to be concentrated on the thick end where the white is, not the leafy end! The Korean way of doing is to coat your fingers with the salt and flick! It works way better how aniki does it!

The next part is really easy! Let the cabbage sink for about six hours. If it flops over and snaps when bent, it's ready!

After that you rinse the strips in clean water and squeeze as much water out of it as possible! Aniki squishes it but it looks a little funny. Not all the water will come out so keep it on a drainer for half an hour.

While that's draining you can make the sauce. This is what makes it taste so good -- you have to do everything exactly right! The rice powder has to be mixed with water in a pot and stirred with passion until it turns white! It has to be thick and bubbly before you stop mixing! You can throw the garlic, ginger, pear, onion, and cheese radish when it cools down. The chili powder, sugar, and fish sauce go in next when it's completely cool. Lastly, the pear mix and spring onion get stirred in.

Press the cabbage against the chili paste so it's coated completely! Even the smallest bit makes it taste weird!

Store it for three days in a dark, cool place and it can go in the fridge! It's really great because it can last up to three months before eating!

Easy enough! You can make it now, right?
