[Is there anything you need us to know about interacting with this character? Special physical features, special abilities, etc] Nothing really - but he's pushing 6'0" for a 3rd year, so that's interesting in my book. XD
[Can I hack that strike or otherwise find out information they'd prefer to keep hidden?] It depends - if it's Gamzee high, yes, that's fine. If it's Gamzee sober, you'll have a hell of a time doing it.
[Can I troll/mindscrew/mess with in general?] Sure! But if you push him too far, his other personality might come out and seriously fuck up some shit.
[Can I spit at/jinx/step on/etc? (i.e. fighting)] Sure! But again, if you push him too far - with fighting especially - you're going to get hexed.
[Can I flirt with/hug/kiss/use other means of non-violent physical contact with this character?] Go ahead! He's pretty fuckin laid back. Just make sure he's high first! XD You wouldn't want to asspat his other personality.

1. Gamzee has two personalities, but he's constantly drinking potions that will keep his other, much less friendly personality down. If you'd like to plot with the other personality, that's fine with me! It'll just take a lot of planning. I'm planning on having him slowly begin to realize he has one and eventually lead to him becoming familiar and okay with having two sides of his personality throughout the game; in the interest of careful planning and not totally screwing the pooch on a sensitive subject, this will take a lot of care.
That being said, your character might notice he has two wands; that's okay, but mentioning to Gamzee early on such a fact will probably just be met with confusion. "that's the way it's always been."

2. On text entries, he'll be posting in tHiS cOlOr Of PuRpLe (HiS fAvE!) aNd A wHiMsIcAl TeXt StYlE. If you'd rather not see the purple/text, please tell me. I'll be cutting his text entries, and if you'd like a reply from a character to be without the color and/or the style, that's totally fine.
