brussels, kale & apple salad + a very lemony vinaigrette

Welcome back to the poop series!
Next up is this high fiber salad with shaved brussel sprouts, kale and apples in a very lemony garlic vinaigrette!
This salad is giving you a texture story with the crunchiness of the brussel sprouts and kale along with the chopped walnuts & the chewiness of the tart dried cherries — it is a texture party! Also, apples with the skin on are high in fiber that helps with digestion.
I hope you guys enjoy this salad as much as I did!
If you want to add a protein to it, my 14 minute salmon would be great!
Ingredients (Serves 3-4)
1/2 lb brussel sprouts, thinly sliced or shaved (about a cup & a half of sprouts)
1 cup chopped dino kale
1 honey crisp apple, chopped (or any apple of your choosing)
1/3 cup chopped walnuts
1/4 cup dried cherries (they will most likely be labeled tart dried cherries in the store)
kosher salt & black pepper, to taste
Lemony Vinaigrette
1 whole lemon, juiced
1 garlic clove, zester or finally minced
1-2 tablespoon maple syrup
2 teaspoons ground mustard, for texture
1/4 cup avocado oil
kosher salt & fresh black pepper, to taste

Directions
For the vinaigrette: combine all ingredients in a mason jar and shake to combine. You guys know what I’m about to say! Taste to adjust seasonings to your palate. If you like more lemon, add more lemon or if you want more garlic, add another garlic clove…it’s your kitchen!
For the salad: add all ingredients to a big bowl season with salt & pepper, pour over the vinaigrette and toss to combine (best tools are your hands) and grate over fresh parm cheeese!
Serve in a large bowl and enjoy!
