Quick Mask Tutorial - First Tut
Open PS 7 or CS this works with both the same.
Hope this helps some folks, if you need any clarification I can answer any questions. I will also add some various other examples at the end it just depends on how you want manipulate the photo and what colors you want to use. You can also use the Quick mask with Desaturation, or any of the other Adjustment options. I just choose to use the Color Balance one more often. On with the tut. This is my first so be brave. ;) Enjoy!
7 easy steps
We are going to simply be manipulating the white flowers over Ms. Berrymore's nipples in this photo.

Step 1:
Select the quick mask option, which is circled in red in this photo. and select a brush size that will work well with what
ever you are trying to manipulate. I chose 9px of the round brush for this one and zoomed in.

Step 2:

Ok so on this one I have shown all the sections...on the flowers over her nipples you will have a red opaque cover on the area you are trying to mask as shown on this picture.
Step 3:
Next you click the button beside the quick mask (I can't remember the name of the button) as circled on the image and you will have the animated ants outlining the image.

Step 4:
Go the the SELECT--> INVERSE to only select the flowers we masked.

This is what you will see, only that area selected.
Step 5:
To start adjusting the colors one of the methods I use is
IMAGE-->ADJUSTMENTS-->COLOR BALANCE as seen here

Step 6:
You will see this screen and you can preview what you change while adjusting. You can mess with this however you like...I find it fairly simple to just move it around until I am happy with the result.

Step 7:
My end result, I adjusted the Midtones and the Highlights, but as I said before you can do whatever you want. I just wanted it to stand out a little so I brightened the flowers with a magenta and red since there wasn't as much with a hint of yellow.
