Help with cropping when using a widescreen photo...

You were all so helpful with my blur and smudge question - and hopefully I'll find the answer to this too.... I've always had this problem and despite reading tons of tuts on cropping, never seen it addressed anywhere.
I am fine cropping a nice square photo, be there one or more people in it The way I go, in PS7 is use the crop tool set to 100x100 and move it around to where I want it - but I've never managed to crop any widescreen pics which until now, I've lived with, but now I have a bunch I really want to do - there are two people in the shot, sometimes three, but the only way to get them both or all is to go right off the picture onto the PS7 screen to get it all in - then when I crop, I have huge amounts of space and the top and bottom and a tiny picture in-between. I have tried holding down, alt, shift, ctrl etc, all to no avail.
The size I am _trying_ to do now is width: 850 and height: 358
There must be a way to do this so I assume there is something I am doing wrong or something I've not got set correctly!
