PS7-help?

hello, I'm just starting to learn the basics of PS7,I'm trying to crop some images and make them into icons and everytime i crop an image and try to copy it onto a blank document, the image comes up in black and white (grayscale) i cropped images before and it never did this. can anyone tell me why its doing this now and how i can fix it?
