How do you get the background erased like in this icon by lvlwing?

And the outline around the Sawyer's head like in this icon by swear_jar?

I've looked in the memories, but I'm not exactly sure how to categorise what I'm looking for, so I might have overlooked it! I would really appreciate any tips or tricks, or links to existing tutorials. Thanks a lot!
