text question

Im new to Photoshop and recently I've been doing alot of tutorials but I have encountered a couple of problems mainly to do with text. In a couple tutorials it talks about Tracking which I think has something to do with spacing of the text but I cant seem to find out how to do it. Can someone point me in the direction of how?

And also in photoshop my text seems to be very big I will have something at 7pt and it is rather big and on a tutorial it is small. Is there a way I can fix this?
