Black & white

Hey everyone.

I was a photoshop cs3 user until I got mac, now I want to make creations again. So I just downloaded photoshop cs5. But I am not so familiar with this version so could anyone tell me how I make black & white pictures and does anyone here have some good black and white PSD's then please send it to me.
