Background...HELP

Ok, this is a retarded question but...

I like having the canvas background transparent, you know, with the white and gray checks like when you start a new project and so on.
Well for some insane reason, my Photoshop will open a picture, but every dang time I try to erase on it, it goes to a background color (like the color on the control panel to the left)
I will just open the program, open a picture and it does it every time!
I just want the usual transparent nothing background as always, I don't know what the heck I did

I hope I worded this right and didn't confuse the heck out of any of you.
Every time I try to see about erasing or trying to get it back to the way it was I just can't seem to do it.

How do it change it back so that when I erase something, no stupid background color comes up (I erase the outside of images a lot go I can place them onto another image to make a graphic, so with it erasing into another color...it goes nothing...)

EDIT: Ok I have whatever is called photoshop CS
In the layers pallete, whenever I open an image, it says background for the image...
And a lock appears.
What I want is to reset the way the pictures that come in so I don't have to edit the layer everytime. I just want to be able to open an image and beable to erase off of it, know what I mean?

Does this sound crazy? lol
