Changes

This PR updates the pipelines and hub version to the latest version available (i.e. v1.0.0 for pipelines and v1.21.0 for hub).
Also update the docs for the cluster task after the PR #2523

for some reason it was bumping go version as well which was not required

can you please bump to version v1.0.0 (https://github.com/tektoncd/pipeline/releases/tag/v1.0.0)?
