What: Move to using io.ktor.http.ContentType instead of javax.activation.MimeType

Why: Replace javax.activation.MimeType with Ktor ContentType to remove fragile runtime dependency on javax.activation (which is no longer bundled with modern JDKs), eliminating NoClassDefFoundError risk
