Since I discovered releases.rs, let me go through all the intervening versions and list things that seem obviously useful to us (bearing in mind that releases.rs has obviously already done curation, so there may be stuff we care about that they didn't list) (I'm also not including stuff like Option::unzip or Result::is_ok_and that I always miss but are trivial to implement with matches):

checked arithmetic on NonZeroU64 and friends
full suite of C types in core::ffi which currently rust-secp256k1 re-implements itself in a way that's probably wrong on some arches
workspace inheritance (so we don't need to replicate our giant blob of clippy lints everywhere)

Generalized abstract types (GATs)
std::backtrack::Backtrace (though I forget if we've ever wanted this in the library itself)
cast_mut and cast_const for pointers

1.66

u64::checked_add_signed and friends (for doing checked arithmetic that mixes u64s and i64s)
std::hint::black_box (for benchmarks)

(Nothing big in 1.67, 1.68, or 1.69 AFAICS)
OnceLock and OnceCell (very useful for rust-secp contexts at least)

core::num::Saturating which should simplify a ton of our saturating arithmetic (though infuriatingly there is still no SaturatingAdd or even CheckedAdd traits so you still cannot do generic arithmetic in Rust
stabilize [lints] in Cargo so we won't get warnings on MSRV about lints.clippy anymore

As you can see, after 1.65 things actually thin out quite a bit (though there are a bunch of minor things, such as string ascii checks being const) (I have also noticed that since we bumped our MSRV to 1.63, way more of the ecosystem has had the same, or older, MSRV; even back on 1.56.1 very few deps worked with us).

After 1.74, the next big thing is ptr::from_ref andfrom_mut in 1.76. Then inline const {} expressions and some type bound stuff I'm pretty sure would help rust-miniscript in 1.79, then core::Error in 1.81, a massive set of newly-const methods including Option::unwrap in 1.83, and not much else through 1.89.
