Suggested in #217 (comment), this PR updates the docker test image for Linux PyPy to focal... but only for 64-bit, since there aren't 32-bit focal images available at https://hub.docker.com/u/multibuild
multi-build/docker-images#14 and multi-build/docker-images#15 fixed the problem that I originally had in making this update.
This also has a commit allowing
MB_PYTHON_OSX_VERto be set on Linux andDOCKER_TEST_IMAGEto be set on macOS - since it simplifies the code and has no effect.
