@tomchristie seems to me like it should have been kept as an issue: I'm able to reproduce it. The following command works with MkDocs 1.5.3 but fails with 1.6.0:
The variable is supported by MkDocs (see https://www.mkdocs.org/about/release-notes/#other-changes-and-additions-to-version-0160 and https://www.mkdocs.org/about/release-notes/#version-111-2020-05-12) and is documented here: https://reproducible-builds.org/specs/source-date-epoch/.
