Description of changes

Bumping minimum OS versions to macOS 14 and iOS 17. No change to visionOS.

Verification

Ran and played with all three demo apps across as many platforms as possible.

Note: visionOS does not build at the moment, but @joannaquu has a fix in the PR here: #2209
