This PR continues a contribution from @sanki92. It updates the docs, makes sure the new swc.config.ts is covered by an E2E test, and fixes an issue where extendSwcConfig did not preserve the SWC defaults described in swc.config files. It also introduces replaceSwcConfig for cases where the defaults should be completely replaced.
