To set MACOSX_DEPLOYMENT_TARGET=10.13
The "ramsey/macos-catalina" box was causing some tests to fail in a non-deterministic manner, due, apparenty, to filesystem issues.
(Py)Qt 5.14 requires 10.13 or higher.
Because "The Ruby Homebrew installer is now deprecated and has been rewritten in Bash."
Since zsh is the default shell as of macOS 10.15/Catalina.
