As we have upgraded our main project's CI suite to build against the latest Go version, we also want to upgrade our Docker builds to the same version, so we use our update-hashes script to change our build_dockers.bsh script and all our Dockerfiles to build using Go version 1.23.1.

As we are upgrading our main project's CI suite to build against the latest Go version, in PR git-lfs/git-lfs#5872, we also want to upgrade our Docker builds to the same version, so we use our
update-hashesscript to change ourbuild_dockers.bshscript and all our Dockerfiles to build using Go version 1.23.1.The changes from this PR and PR git-lfs/git-lfs#5872 have been tested successfully together using a full run of our main project's CI suite in a private repository.
