I think we can extend this section and talk about the require flag more

Adds the changelog entry for 8.0.0 (stable). Still in draft - please feel free to add your thoughts what else should (not) be in here. Most of this is based on the 8.0.0-beta.0 entry but I swapped orders, rewrote the ESM/SDK init section and linked to docs in favour of MIGRATION.md where applicable.
General idea: Mention most important changes on a high-level; link to details and advanced migration instructions.
We can either merge this and make an additional
prepare-release/branch or simply close this PR and throw the entry onto the branch directly.
