IfPipe default supportedMediaType (when no xpath nor jpath is still XML)

IfPipe#getForwardForStringInput does a text based assertion.
getSupportedMediaType does not support text.

See #10166, no xpathExpression nor jpathExpression has been set (thus text based assertion) uses wrong mimetype.
