#181769 landed support for macOS wide gamut support. It landed it cautiously behind a plist flag whose default value is off.

We had a similar mechanism for iOS when wide gamut shipped. There the concerns were memory usage and performance. We don't have those same concerns here. Once we deem the test coverage sufficient we should rip out the option to turn it off.
