docs: Stability and support page says v1.0 hasn't been reached #5888

Describe the bug
The "Stability and Support" page, https://external-secrets.io/main/introduction/stability-support/, is well written and has a nice table showing the various versions of the External Secrets Operator as well as their end of life dates. However, as someone in charge of deployments, new to the External Secrets Operator, the page is a little confusing.

1. stable 1.0?
The page says:

External Secrets Operator has not reached stable 1.0 yet.

and

Until we reach v1.0...

but the operator is past v1.0 and into v1.3.

2. Release of next minor?
The EOL table also has several rows saying "Release of next minor" in the End of Life column, where the next minor has been released. My team's scrum master interpreted that as meaning that the v1.0 and v1.1 had not yet reached end of life. And my reading of the table is that the end of life for those releases has been reached since a next minor version has come out. Unless I'm wrong, the table should be cleaned up a tiny bit.

Expected behavior
Page is consistent and describes the stability and support for post v1.0 versions. Explicit end of life dates are given when known.
