I think we're ok with that. We already changed the team changed in the comments we post to our new one.
Where do we make this change?

Oh this is because of the default:

dotnet/CODEOWNERS

Lines 4 to 8 in 88c8789

# These owners will be the default owners for everything in
# the repo. Unless a later match takes precedence,
# @dotnet/product-construction and @dotnet/source-build will be
# requested for review when someone opens a pull request.
* @dotnet/product-construction @dotnet/source-build

I think we don't want to change that.
