- Switch Windows builds to use VS IDE / MSVC
- Although Ninja is faster, I've been having issues debugging with MSVC, so switch back for now
- Fix macOS build is failing in CI #353:
- Add Macos SDK path required for CMake v4+
- Update Qt for Macos to 6.9.3 due to https://qt-project.atlassian.net/browse/QTBUG-137687
MSVC seems to have problems loading the CMake project directly; switch to MSVC compiler to make debugging and testing easier. Also update Qt to latest LTS.
https://cmake.org/cmake/help/v4.2/variable/CMAKE_OSX_SYSROOT.htm. Set the SDKROOT via environment variable, hopefully stable as CI environment changes. Also switch macos to Qt 6.9.3 due to https://qt-project.atlassian.net/browse/QTBUG-137687
