Steps to reproduce

1. uds run test-uds-core
2. check name and namespace of loki service account
3. look at the loki bucket configuration in .github/test-infra/buckets-iac/variables.tf

Expected result

The namespace and service account should match between the resources deployed and the bucket configuration

Actual Result

they don't match currently
