docs: images not rendering properly in docs (backport #2331)#2339

Closes #2282 Added a white background to some images to make them render properly on our dark theme docs website. A user reported that they could not read black text on the docs site. I believe these images are quite old in the documentation, so back port them to previous releases. (cherry picked from commit b3e1499)
