What problem is this feature going to solve? Why should it be added?

There is no way to customize DefaultPgbouncerImage.

Create an operator configuration to allow the user to customize DefaultPgbouncerImage

Describe alternatives you've considered

Leave everything as it is now.

Additional context

This is useful in case of airgap environments or company internal repositories.
