Upgrade guide doesn't match api doc #19393

Describe the bug
FileScanConfigBuilder still accept file schema as parameter.
ParquetSource::new doesn't take TableSchema.
To Reproduce
Compare upgrade guide and api doc.
Expected behavior
Upgrade guide needs match the api.
