[Docs] Documentation still refers to app bridge v1.x #71

Description

Describe the bug

It would be great if documentation would be updated to refer to v2.x since v2.0.0 was released 5 months ago.

To Reproduce

Visit: https://shopify.dev/apps/auth/session-tokens/rails-react-app-bridge-app#create-a-frontend-using-react
Or visit: https://github.com/Shopify/next-gen-auth-app-demo
Or: https://shopify.dev/apps/auth/session-tokens/server-side-rendered-apps#steps

It's difficult to keep up to date and to upgrade to app bridge v2 when most of the documentation is compatible with v1 (read: old) and there's no source code of the package, but we have to trust that the code.
If the package claims to be released under MIT license, then I'd hope to be able to see the code repository, not just the npm package release.

Expected behaviour

Documentation is updated to v2. Even better would be if there would be v1 and v2 documentation that can live in parallel (so that people who cannot upgrade now for whatever reason can still check the documentation for reference).

Packages and versions

List the relevant packages you’re using, and their versions. For example:

  • @shopify/app-bridge @ latest
  • @shopify/app-bridge-react @ latest
  • @shopify/polaris @ latest
