lib/customization.nix: makeScope: add pseudo-type and example#220279

I couldn't find any good examples of creating a totally fresh scope (one that doesn't somehow extend some instance of nixpkgs) and had to puzzle this out on my own. An example of that, and pseudo-"types" expected by makeScope, would have helped. So let's add those.
