Could you add the option to extract *.srt embedded subs with UTF-8 without BOM?
MKVToolNix version 96.0 implements this:
"all programs: added a command-line parameter --no-bom that disables writing byte order marks to text files encoded with one of the UTF variants. Implements https://codeberg.org/mbunkus/mkvtoolnix/issues/6166
