Looks like JUnit 6 is mature enough, let's upgrade.

Since JUnit 6 requires Java 17 or above, can only switch Jackson 3.x.
Normally would do it for next minor version, but for maintenance reasons (3.1 is LTS and will have longer life-span), let's target 3.1 branch to switch in 3.1.1.
