removing all default exports and version locking ts-jest until further notice. Tests were previously failing because of "implicit any" types and global fetch not getting set properly. This is a breaking change from beta3, but this PR does NOT include the necessary supplemental changes to documentation. We also need to further discuss the impact of this change on all various environments before merging it in.
