Splits the Capture Logs command into multiple commands:

  • Capture Logs: Selectable capture categories via a picker, as before.
  • Capture Analysis Server Logs: Only captures Analyzer and CommandProcess.
  • Capture Debugging Logs: Captures everything except Analyzer.
  • Capture Extension Logs: Captures only CommandProcess, DevTools, and FlutterDaemon.

Includes tests.

Fixes #2789.
