This issue is to take track of the work required to merge the contribution by @oo00 provided in #2462

• cleanup the original pr: formatting, disable manual tests
• add a simple e2e test to have a proof that grpc works fine
• merge the pr, re-check all

Then, when merged to main

• re-enable tests and automate them: if a running server is needed, move to e2e
• increase coverage adding more UT
• replace slf4j with ArcadeDB logging
• add to perf-tests
• add issue to handle documentation update: Add documentation fo gRPC arcadedb-docs#342
