Description of the Change
This PR bumps the WP tested up to version 6.8, and bumps the WP min to 6.6.
Closes #329
How to test the Change
Load PR in a local env with WP 6.8 to see no issues in the admin or frontend. Alternatively see that the e2e tests pass.
