Description of the Change
This PR bumps the WP tested-up-to 6.8, the WP min to 6.6, and then updates the cypress e2e action to utilize commit hashes for pinned versions (I noticed while bumping the WP min there, other actions look ok in this repo).
Closes #46.
How to test the Change
Already tested in #46 (comment), but can use WP Playground to test on 6.8.
