Continuing the run of Avengers-themed fried potatoes, today's lunch mobilized the box grater to shred up a large roast beet, a baked potato, an apple, and lots of ginger. If you don't mind wasting a little, you can skip peeling anything--the peel ends up in your hand. But if you're not careful, even if you didn't start out with a Red Room you'll end up with one...
Sauteed until crisp, served with a big spoonful of plain yogurt to mix in. If I'd wanted to make more coherent pancakes I could have beaten in some egg, or made cutlets by mashing the potato and shredding the beet and apple. It would make a dramatic brunch dish with scrambled eggs on the side or a fried egg on top, or baked in individual ramekins with a shirred egg.
