Om Nom Nom: Vegan Bacon

I had a loaf of whole wheat-oatmeal bread in the oven, so to use the heat I mixed some TVP with bottled barbecue sauce, yummy Bufalo hot sauce, and lemon pepper.

There's a great new Chinese supermarket in Chinatown in Manhattan, with a fabulous selection of tofu products. I picked up a package of yuba (tofu skin)--which is what forms on top of a vat of tofu, the way skin forms on top of chocolate pudding unless, of course, you hate the skin and put wax paper on top of the pudding as it cools to prevent skin formation.

Anyhow, yuba is bland and has a sort of lasagna-noodle texture. I love it in stir-fries and I thought that, flavored and crisped up a little, it would be eminently baconish. (Obv. this won't work if you don't eat soy...)

It is! It is! I pulled out the pan'o'soyproducts after about 20 minutes. I don't know if I'll be able to fabricate a "bacon sandwich" tomorrow because most of the yuba was tested to destruction while I was standing at the stove (and the granule mixture is also quite tasty). Next time I don't think I'll use the lemon pepper, I'll do lots and lots of cracked black pepper instead.
