If you look closely at it, you\u2019ll see that a spoonful of MSG is actually made up of small, elongated crystals. Over the past 3 years, I\u2019ve successfully grown crystals from <a href=\"https:\/\/crystalverse.com\/sodium-chloride-crystals\/\">table salt<\/a>, <a href=\"https:\/\/crystalverse.com\/grow-alum-crystals-at-home\/\">alum<\/a>, <a href=\"https:\/\/crystalverse.com\/best-way-to-grow-copper-sulfate-crystals\/\">copper sulfate<\/a>, <a href=\"https:\/\/crystalverse.com\/growing-crystals\/\">fertilizer<\/a> and many more. It\u2019s surprising how easily you can crystallize many household materials.<\/p>\n<p>However, I couldn\u2019t find much information on growing MSG crystals online. So I decided to give it a try, and the results surprised me. In this guide, I\u2019ll share how to grow MSG crystals with you. Umami in its purest form.<\/em><\/p>\n<h2>How to grow MSG crystals<\/h2>\n<p>The concept is simple. Dissolve the MSG in water to form a saturated solution. Pour it into a dish, and wait for small crystals to form. Then, tie a crystal to a string, and hang it in a cup of solution to let it grow bigger.<\/p>\n<h3>Materials<\/h3>\n<p>The only thing you need is monosodium glutamate, MSG. 500 g is enough to grow all the crystals you\u2019ll see in this guide.<\/p>\n<p><a href=\"https:\/\/amzn.to\/4472zXR\" target=\"_blank\" rel=\"noopener\"><img decoding=\"async\" class=\"alignnone wp-image-1998 size-full aligncenter\" src=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/msg-1.jpg\" alt=\"msg\" width=\"400\" height=\"364\" srcset=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/msg-1.jpg 400w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/msg-1-300x273.jpg 300w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/a><\/p>\n<p>Let\u2019s get started.<\/p>\n<h3>Preparing a saturated solution<\/h3>\n<p>Prepare a pot of hot water. Dissolve MSG of equal mass in it, and stir until everything dissolves. For example, if you have 500 ml of water, then dissolve 500 g of MSG in it.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-999\" src=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/dissolving.jpg\" alt=\"\" width=\"1000\" height=\"750\" srcset=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/dissolving.jpg 1000w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/dissolving-300x225.jpg 300w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/dissolving-768x576.jpg 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>At first, the solution will be very cloudy. After around 5 minutes, all the powder should have been dissolved, and the solution will clear up.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-1000\" src=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/dissolving-2.jpg\" alt=\"\" width=\"1000\" height=\"750\" srcset=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/dissolving-2.jpg 1000w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/dissolving-2-300x225.jpg 300w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/dissolving-2-768x576.jpg 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>Once the solution clears, immediately turn off the heat, and <strong>close the lid<\/strong>. Wait for the solution to cool to room temperature.<\/p>\n<p>What you\u2019ve just prepared is a supersaturated MSG solution. Since hot water can dissolve more MSG than cold water, once the solution cools, the extra MSG has nowhere to go. Thus, it crystallizes out, forming crystals in the process. This is exactly what we want.<\/p>\n<p>After cooling, split the solution into 2 portions. Prepare one small portion (50 ml) and pour the rest into a large jar.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-1001\" src=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/solution.jpg\" alt=\"monosodium glutamate solution\" width=\"1000\" height=\"750\" srcset=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/solution.jpg 1000w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/solution-300x225.jpg 300w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/solution-768x576.jpg 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><em>I\u2019m using beakers, but you can use any container you like.<\/em><\/p>\n<p>The solution might look yellowish \u2013 that\u2019s normal. The crystals won\u2019t end up yellow.<\/p>\n<p>Now, put the big portion aside for the moment. It\u2019s better if you cover the top with a lid, or seal it with some plastic wrap. If your place is much drier, it might be necessary to get creative. For example, place the dish in the bathroom, near some plants, or inside a bowl containing water.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-1004\" src=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/overgrown-dish.jpg\" alt=\"msg crust\" width=\"1000\" height=\"750\" srcset=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/overgrown-dish.jpg 1000w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/overgrown-dish-300x225.jpg 300w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/overgrown-dish-768x576.jpg 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><em>I placed this dish in the shoe cupboard outside my house \u2013 apparently it was too hot there.<\/em><\/p>\n<p>Meanwhile, the dish inside the storeroom did pretty well.<\/p>\n<p>When there are quite a lot of crystals in the dish, you want to move on to the next step.<\/p>\n<h3>Getting the MSG crystals to grow onto a string<\/h3>\n<p>Tape one end of a string to a stick, or a pencil. Again, nylon fishing line works best. After that, wait one more day to ensure that the crystals stick the string.<\/p>\n<p>Take the string out, together with the crystals stuck to it. This will be our main growing setup, and allows us to grow much larger crystals.<\/p>\n<p>It\u2019s better to suspend the crystals rather than to grow them straight in the dish because of 2 main reasons:<\/p>\n<ul>\n<li>Suspending the crystals allows them to grow more symmetrically<\/li>\n<li>Suspending one crystal prevents others from growing close to it and sticking together, forming a big, ugly clump<\/li>\n<\/ul>\n<p>Before we look at how the suspended crystal grows, let\u2019s talk about another possibility:<\/p>\n<h3>Growing the MSG crystals at the bottom of the dish<\/h3>\n<p>Sometimes, if the conditions are stable enough, no crystals will form in the dish for a very long time. To fix this, you can manually sprinkle one or two grains of MSG into the dish. These grains will start growing quickly, and you can proceed as usual.<\/p>\n<p>Or you can do nothing. It might take weeks, but as the solution gets more and more concentrated, tiny crystals will eventually form. Since there are very few crystals inside the dish, and the environment is stable, these crystals will be very well formed, and grow into large clusters right inside the dish.<\/p>\n<p><img beautiful crystals with something so simple.<\/p>\n<h3>Growing big MSG crystals<\/h3>\n<p>Let\u2019s get back to our suspended crystals.<\/p>\n<p>I\u2019ll show you pictures of several other crystals I suspended \u2013 since you\u2019re already doing it, you might as well grow a few crystals all at once.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-1011\" Left alone, it will slowly cover the entire surface, slowing down evaporation and competing with your main crystals. If that\u2019s the case, then simply pour the solution into a new container, and continue growing.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-1015\" src=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/growth-8.jpg\" alt=\"unwanted crystal crust\" width=\"1000\" height=\"750\" srcset=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/growth-8.jpg 1000w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/growth-8-300x225.jpg 300w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/growth-8-768x576.jpg 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><em>Crust forming on the surface of the solution. You don\u2019t want that.<\/em><\/p>\n<p>I\u2019ve found that covering the top of the container with plastic wrap helps to slow down the formation of crust.<\/p>\n<p>After a month:<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-1016\" src=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/growing-msg-crystals.jpg\" alt=\"growing msg crystals\" width=\"1000\" height=\"1333\" srcset=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/growing-msg-crystals.jpg 1000w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/growing-msg-crystals-225x300.jpg 225w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/growing-msg-crystals-768x1024.jpg 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>The crystals were getting too big for the beaker. If you have more solution, and a bigger container, you can grow even more massive ones.<\/p>\n<p>I was satisfied with mine, so I decided to harvest them.<\/p>\n<p>Once again, I dried them with a piece of tissue paper. Make sure to soak up all the solution, or white specks will form on the crystal as the excess solution dries. If the air is too dry, the crystals might lose this water, turning white.<\/p>\n<p>Fortunately, the crystals are stable where I stay. I\u2019ve kept them in the open for a few weeks with no visible change.<\/p>\n<p>But I\u2019ve still decided to store them properly:<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-1020\" src=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/storage.jpg\" alt=\"\" width=\"1000\" height=\"750\" srcset=\"https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/storage.jpg 1000w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/storage-300x225.jpg 300w, https:\/\/crystalverse.com\/wp-content\/uploads\/2022\/01\/storage-768x576.jpg 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>Seal the crystals in a zip lock bag. Then, place it in a container with some MSG powder at the bottom. The powder should help maintain a stable atmosphere inside the container, preventing dehydration of the crystals.<\/p>\n<p>If the air is very dry where you live, this setup will help preserve the crystals. Coating them with nail polish also provides further protection.<\/p>\n<h3>Some additional notes<\/h3>\n<p>When growing, make sure the level of the solution does not decrease so much as to expose the crystal. Probably not a good idea though &#8211; are you so greedy for flavor?<\/p>\n<p>Another commonly asked question is:<\/p>\n<p>How hard are the crystals?<\/p>\n<p>Not that hard. It\u2019s perfectly fine to hold them, but it\u2019s also easy to break the crystals off with your fingers. And they\u2019ll fall apart when dropped.<\/p>\n<p>Because of this, and due to the fact that they are soluble in water, it\u2019s not suitable to make jewelry with MSG crystals.<\/p>\n<p>Treat them as a cool experiment to do with family and friends.
