{"id":99,"date":"2016-05-16T14:29:06","date_gmt":"2016-05-16T22:29:06","guid":{"rendered":"https:\/\/codecookread.com\/?p=99"},"modified":"2017-01-11T13:37:15","modified_gmt":"2017-01-11T21:37:15","slug":"escalivada","status":"publish","type":"post","link":"https:\/\/codecookread.com\/escalivada\/","title":{"rendered":"Escalivada"},"content":{"rendered":"<p>This escalivada\u00a0was\u00a0the third of ten new dishes I made for my <a href=\"https:\/\/codecookread.com\/my-2015-resolution\/\">2015 Resolution<\/a>:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" style=\"display:block; margin-left:auto; margin-right:auto;\" src=\"https:\/\/codecookread.com\/wp-content\/uploads\/2017\/01\/Escalivada.jpeg\" alt=\"Escalivada\" title=\"Escalivada.jpeg\" border=\"0\" width=\"600\" height=\"450\" \/><\/p>\n<p>I first tasted <a href=\"https:\/\/en.wikipedia.org\/wiki\/Escalivada\">Escalivada<\/a> in Barcelona. It&#8217;s a smoky Catalonian vegetable dish. I charred my veggies on a gas grill rather than a wood fire, so my dish lacked some of the smoke flavor from\u00a0the original cooking method.<\/p>\n<p>Escalivada is a great alternative to <a href=\"https:\/\/en.wikipedia.org\/wiki\/Crudit\u00e9s\">crudit\u00e9s<\/a> if you want to have delicious vegetables on the table for a party. Serve alongside flatbread or crackers.<\/p>\n<p>Escalivada also makes for good before and after pictures. You&#8217;ve seen the after above. Here&#8217;s the before:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" style=\"display:block; margin-left:auto; margin-right:auto;\" src=\"https:\/\/codecookread.com\/wp-content\/uploads\/2017\/01\/Pre-Escalivada.jpg\" alt=\"Pre Escalivada\" title=\"Pre-Escalivada.jpg\" border=\"0\" width=\"599\" height=\"450\" \/><\/p>\n<p>The one\u00a0downside to escalivada is the time it takes to prep\u00a0the vegetables. It took quite a while to break these down into sizes appropriate for cooking. It&#8217;s also not a fast dish to cook, as it takes time for the flavors to build.
