Zucchini and Leeks

Something so simple can be absolutely delicious!  It’s hard to improve on tasty fresh vegetables in their most basic form.   This side was a perfect example of that.  My husband isn’t wild about either zucchini OR leeks yet he raved about this with our BBQ chicken last night.  Said I could fix that again any old time.  I have to admit it was delicious.  I reheated the leftovers with a Salisbury Steak today for lunch and my impression of this vegetable side just grew more favorable!  🙂  This recipe is suitable for all phases of Atkins and Keto programs as well as Primal and Paleo diets.

INGREDIENTS:

2 medium zucchini (about 6″ long), stemmed and sliced (about 2½ c.)

1/4 large leek, washed well between leaves, sliced thinly (about 1 c.)

2 slices thick bacon, chopped coarsely

Dash coarse black pepper

DIRECTIONS:  Brown the bacon in a skillet over high heat.  Add the zucchini and saute, stirring constantly for a few minutes.  Add the leek last and saute all just until the zucchini is tender but still a bit firm. Serve at once.

Meatza Meatza® Spinach Burrito

I broke my run on salads this week, OH MY!  I just wasn’t hungry for breakfast this morning, so I just had a cup of coffee.  The hubs took his usual Sunday hobby trip to Austin and it was just me and Button left to our own devices.  By 10:00 I was feeling a might peckish, so I ate brunch.  With just one last psyllium flat bread in the fridge, this is what I came up with.  A couple meats, a dash of fresh spinach and a bit of cheese to bind it altogether and man, was this ever tasty and filling!   This would be great breakfast, brunch or lunch!  I’ll need to get in the kitchen later today to make some more of my flat breads!  This recipe is not suitable until you get to the flour/grains carb re-introduction level (Phase 2) of Atkins due to the very healthy Einkorn flour and CarbQuik bake mix in the ingredient list for the flat bread.

INGREDIENTS FOR EACH BURRITO:

1 Flat Bread round

3 oz. bulk pork breakfast sausage

2 slices thick pepper bacon

3/4 c. fresh baby spinach leaves

2 T. shredded Monterrey Jack Cheese

DIRECTIONS:  Lay the cooked flat bread on a serving plate and set aside the stove top.  In the middle of a small skillet, using your fingers, form the sausage into an oblong, half-moon shape the size of one half of the bread round.  Lay each strip of bacon along the outer edges of the skillet.  Over medium-high heat, brown until all the meat is thoroughly cooked on both sides.   With your spatula, set the sausage on one side of the bread round.  Lay the two strips of bacon on top of the sausage.  Now wilt the sausage right in the grease remaining in your skillet.  When wilted/cooked lift it onto the burrito atop the bacon.  Sprinkle the 2T. cheese on top and fold the other side of the flat bread over all, securing with a toothpick.  Place plate in microwave at 30% power for about 3-4 seconds so the cheese will melt.  Remove and serve at once.

NUTRITIONAL INFO:   Makes 1 burrito which contains:

670 cals, 60g fat, 18.5g carbs, 10.1g fiber, 8.4g NET CARBS, 33.4g protein, 1417 mg sodium

Carbs can be lowered serving open-faced on only 1/2 bread round; sodium and fat can be lowered making your own lean sausage homemade.

“Frosted” Sausage Donuts

Sausage Donuts

An interesting approach for a crustless quiche creation.  These rose halfway up the sides of the little pans and each one was a perfect portion for an adult!  And they were delicious! If you don’t like mushrooms, you can just omit them (carbs will go down a wee bit).  This recipe is suitable for all phases of Atkins and Keto diets if you can fit the numbers into your daily routine.  They are suitable for Paleo-Primal folks if you substitute coconut milk for the cream.

INGREDIENTS:

5 oz. pork bulk sausage

4 medium mushrooms, chopped

1 green onion, chopped

3 medium eggs, beaten

¼ c. shredded Monterrey Jack or Mozzarella cheese

1 c. heavy cream

¼ tsp. dried tarragon

Dash each salt, pepper and cayenne pepper

1/8 tsp. xanthan gum or your favorite thickener

OPTIONAL:  Chopped parsley to garnish

DIRECTIONS:  Preheat oven to 350º.  Crumble and cook the sausage, green onion and mushrooms over medium-high heat.  Spoon 1/4 of the mixture into two non-stick mini angel food cake pans.  If you don’t have those, use a donut pan (you will have to spread mixture and cheese out over 4 donut wells instead of 2 pans as I used).  Alternately, you could fill 2 large muffin pan wells or use two mini-loaf pans.   Sprinkle 1 T. cheese over each one.  Spoon in the remaining 1/4 mixture into each pan again.  Again, sprinkle 1 T. cheese over each one.  All filling and cheese should be distributed now.

Beat the eggs in a small bowl.  Slowly drizzle the egg mixture over all the “donut” shapes you are making.  If you need more egg using different pan, beat up another egg and finish filling them up to 1/2 the height of your well shape.  Pop pan into hot 350º oven and bake for around 10-12 minutes, watching closely so as not to overcook them.  Will be dry to the touch on top when done.

While they are cooking, make the sauce.  Heat the cream in a skillet over medium heat.  Add the tarragon, salt (omit if very sensitive to salt), pepper and cayenne.  Dust your preferred thickener over the top and stir until it thickens up for you.   When you remove the cooked donuts from the oven, tip them out of the pans onto your serving platter, using a knife tip to help removing them.  Spoon the sauce over the top and garnish with chopped parsley if desired.  Serve at once.

810 cals., 75.1g fat, 6.25g carbs, 0.85g fiber, 5.4g NET CARBS, 29.15g protein, 870 mg sodium

Since you may use different pans, I am providing the numbers for the entire recipe below.  Simply divide these numbers by the number of portions you made to get the values for one of YOUR servings.

Chicken-Kale Salad

We baked chicken this week and earlier in the month as well, therefore I had quite a bit of leftover chicken meat in the freezer.  I decided to make an interesting salad with it for lunch today.  I’ve discovered I quite like raw kale in salads.  It’s not bitter or strong when used raw and in moderation.  But if you’re totally hung-up on not eating kale, you can certainly substitute fresh baby spinach leaves in this salad.  I would leave the baby spinach leaves whole and pinch off the stems.  This salad was surprisingly delicious and very filling.  If you are farther along in your weight-loss journey, you can add more chopped prune if you like a fruitier chicken salad.  I think it would be good with more prune, to be honest.  I always put some onion in the processor when making my homemade mayo, but if you do not, you might want to add a bit of slivered red onion to this salad.  This salad is not suitable until you are in phase 2 of Atkins.

INGREDIENTS:

1 large (or 2 small) leaves curly-leaf kale (about 1 c. chopped)

4 c. cooked chicken meat, cut in ½” dice

¼ c. homemade Shawarma Mayonnaise

2 dried prunes, chopped (Del Monte=no added sugar), chopped

OPTIONAL:  8 black olives, chopped, 8 walnut halves broken up, some red onion

VARIATION:  Instead of 2 prunes, sub in ½ c. diced apple (careful, as it’s very carb-y!).  Instead of kale, you could use fresh spinach leaves.

DIRECTIONS:  Stem and coarsely chop kale and place in medium bowl.  If you prefer to use baby spinach, stem and leave leaves whole.  Add 4 c. chopped chicken meat to the bowl.  Next add the homemade Shawarma mayo.  Chop prunes small and add to the bowl.  I actually did add the optional black olives to this at my husband’s urging, but thought they added nothing and may just leave them out next time.  I’m not fond of them thrown into as many dishes as he is.  😉  Add walnuts if using.  Using a large spoon, toss all ingredients to coat well with mayo dressing.  Spoon into a serving dish and serve at once.

Shawarma Carrot Salad

My regular followers know how I love my Chicken Shawarma Spice Blend!  Well, I’ve found yet another delicious way to use this flavor profile.  This tasty recipe is a new twist on an old favorite.  Carrot salad was one of my mother’s favorites!  Me, I wouldn’t touch the stuff growing up, because I didn’t like mayonnaise on anything.  But what I discovered, at about the age of 50, was that homemade mayo is a totally different animal than the junk sold at the store in jars.  From that point on, my food world changed!  Many new menu doors were then opened for me! Now I can eagerly add this popular classic to my buffet tables and actually some myself!

The only changes I made to the classic: use homemade mayo with my Chicken Shawarma Spice blend; substitute lower-carb no-sugar-added dried prunes for the “carb-ier” raisins.  You can snip a few raisins into this recipe instead, but bear in mind, in doing so, the carb count goes up and the numbers will need to be recalculated.  Although Colette Heimowitz, Atkins nutritionist, says a little bit of carrot is allowed on Atkins Induction, this recipe has so much carrot, I would wait until Phase 2 OWL to enjoy this delicious salad.

INGREDIENTS:

2 large carrots

4 T. my Shawarma Mayo

2 dried prunes (Del Monte brand has no sugar), cut to small bits

VARIATION:  Add a little bit of diced, cooked chicken for a complete meal

DIRECTIONS:  Peel carrots.  Cut off root and tip ends.  Either grate the carrots, spiralize them, slice them thin and round, make them into ribbons, or any mixture of shapes you like.  I was testing a new spiral making hand tool and ended up with two different shapes (ribbons and julienne) LOL………….Obviously I was doing something wrong, but the salad was no worse the wear for this learning mistake.  Place the prepared carrot in a small bowl and toss well with the Shawarma Mayo and snipped up prune pieces. Refrigerate until ready to serve.

Bacon-Mushroom Stuffed Pork Loin

I bought a whole pork loin this week and cut the point end off for making a pork roast one night.  Tonight was the night!  I have fresh mushrooms in the fridge so I decided to stuff it.  A little cream cheese and smoked Gouda to bind and for added flavor.  Man, oh, man, was this ever good, even if it spattered making for a less than stellar photo.  I know it sounds rich, but it really wasn’t!  This recipe is suitable for all phases of Atkins and Keto diets.

My roast was just a little 1¼ lb. tip end of the loin, so I had some stuffing leftover.  Your roast may be larger and accommodate all the stuffing nicely.  If not, just heap it up at the front of the cut end much like a Thanksgiving cornucopia, “spilling out”.  We spooned some of the extra stuffing onto our portions!  🙂

INGREDIENTS:

1-1¼ lb. small pork loin roast

2 slices bacon, chopped

5 medium mushrooms, chopped

2 oz. onion (I used red), chopped fine

1 oz. cream cheese

1 oz. Smoked Gouda cheese, shredded

3/4 c. parsley (loosely packed), chopped

Dash each sea salt and coarse black pepper

2 T. hemp hearts

DIRECTIONS:  With a large kitchen knife, cut a pocket into the pork roast, being careful not to go all the way through on any sides.  Spread apart and set on baking pan to receive stuffing.

Preheat oven to 350º.  In a skillet over medium-high heat, brown the bacon.  Add the onion, salt and pepper and saute until onion is tender.  Add all remaining ingredients, mashing up the cream cheese until it is fully melted and well-blended.  Remove from heat and stuff into the slit in the pork roast.  Pack it in well, allowing any overage to spill out onto the baking pan.  Cover front side where stuffing is with a piece of foil to prevent over-browning during cooking (removed when nearly done).  Pop into 350º oven and bake for about 1-1¼ hours, or to internal temperature of 160º.  I used my convection setting, so my roast only took around 45 minutes to get done.  Remove from oven and serve in baking dish or remove to a platter carefully.  I added a couple tablespoons of water to the pan to de-glaze the tasty brown bits to make a thin natural gravy to spoon up over the slices of meat when serving, but this is not necessary.  I’m just a gravy addict.

Iranian ‘Noon-Sangak’ (Flat Bread)

I miss Iranian flat bread they cook on pebbles in huge open ovens.  Bread is called ‘noon’ in Iran and the particular 2-foot sheet-bread I recall is called ‘sangak’, as it is cooked on an open-front, kiln-like oven directly on the surface of blazing hot pebbles therein.  I found a wonderful video on this bread making I will share:  https://thecaspianchef.com/2020/03/28/naan-sangak-persian-flatbread/.  They used much smaller pebbles in the Teheran bakeries and also used a long-handled wooden paddle to reach in the ovens to flop the oiled bread dough onto the pebbles, and long tongs for flipping the sheets over to cook the second side.  They picked off the burnt-on pebbles cursorily and quickly flopped it onto a sheet of brown paper for carrying home.         

This recipe for bread I have been working on for quite sometime.  It is finally where I want it both in texture (somewhat chewy) and flavor.   Though not true ‘noon-sangak’ by any stretch of the imagination, as a low-carber can’t eat a lot of whole wheat flour.  But it is similar in flavor and texture for serving with my Middle Eastern foods.   It is excellent right off the griddle hot with butter and will work well with your favorite curry recipes.  It also works for rolling and filling with eat mixtures or just for dipping into some hummus or Syrian Za’atar herb/oil mixture well-known throughout the Middle East.  I think any way you decide to serve it, this bread, for me, comes close to a ‘noon-sangak’ experience, minus the pebble part, that is.

This recipe is not suitable until you are at the grains rung of the Atkins carb re-introduction ladder as there is some flour product in it.  But I found this little bit of flour absolutely necessary.  All trials for flat breads to dat attempting to use coconut flour alone, almond flour alone or any combination have come out just awful in my opinion.  This bread is one step closer in the right direction.

1 c. low-carb CarbQuik bake mix (or other low-carb mix)

1 c. almond flour

½ c. Einkorn whole wheat flour (from Jovial Foods)

3 T. psyllium husk powder

1½ tsp. baking powder

¼ tsp. sea salt

2 T. olive oil

1¼ c. boiling water (added slowly, as all may not be needed)

1 T. olive oil for browning on griddle

DIRECTIONS:   Bring a kettle of water to boil and pour off 1¼ c. into a measuring cup (preferably one with a pour spout) and have by your work bowl.  Measure dry ingredients into a large mixing bowl and stir well to blend ingredients evenly.  Drizzle the 2 T. olive oil over the dry ingredients.  With water in your left hand and a fork in your right, slowly pour most of the water (1 c.) over the dry ingredients whisking with your fork continuously as you do so.  All should begin to come together into a single mass of dough.  It will firm up as you work the dough.  Only add the remaining water (in small increments) if the mass of dough seems too dry to knead.  Dough will be a little sticky at first, but it dries slowly as you work it.  Use a silicone spatula to help you work the dough into a contiguous ball of dough and to scrape down the sides of the bowl to get all the dough.  Let dough sit on counter for 12-15 minutes or until you can hand knead it.

Knead the dough 8-10 times.  You can dust your hands with some low-carb flour to help you with handling if need be, but if the dough has set long enough, it should be getting dry enough extra flour dusting should not be necessary.

Set dough ball on a silicone sheet (or a piece of plastic wrap “glued” to your counter with a swipe of water), form a log shape with the dough.  Cut the log into 8 equal pieces.  Roll each into a smooth ball of dough with your palms and set on the edge  of your silicone sheet while you work.  Cover with a clean kitchen towel if you are a slow worker so it won’t dry out.  Heat a non-stick griddle to medium-high heat.  The remaining 1 T. olive is for oiling the griddle.  With your spatula, dot the griddle lightly between batches as you cook the breads, much as you do when making pancakes.

I cook 2 round flat breads (or 2 oblong one) on my griddle (spans 2 stove burners).  Using your palms and fingers, press 1 ball of dough on your silicone sheet into a 5-5½” circle.  Again, you can dust your hands with low-carb flour if need be, but I found it wasn’t necessary.  Lifting the silicone sheet, tip the flat dough round onto your free hand and transfer to hot, oiled griddle.  Brown to a golden color on both sides.   Remove to a serving platter and set near stove to keep warm while you cook the remaining sheets.  Serve at once with butter, za’atar herb/oil mix or your favorite Middle Eastern foods.

VARIATION:  If making to use as tortillas, divide the log of dough into TEN portions and roll it out much thinner, as thinly as you can.  Each tortilla will have 126 calories, 11g fat, 13.37g carbs, 7.7g fiber, 4.8g protein and 180 mg sodium

Chick Pea Tabouleh Salad

When I got home from a doctor’s appointment and the grocery store today, the chicken legs I bought on sale sounded so good I baked off 4 of them for lunch.  Needed something green to have with them and decided my fresh bunch of parsley and cut cucumber in the fridge would make a nice Middle Eastern salad.  Had a can of chick peas in the pantry and added a few of those to make this salad a bit more substantial.  DELICIOUS!

This recipe is suitable once you reach the legumes level of Atkins Phase 2 carb re-introduction ladder.  Although chick peas, also known as garbanzo beans, are a little carby, they are low on the glycemic load index, so they have little impact on your blood glucose maintenance.  Therefore they are one of the healthiest dried beans you can eat, if you eat beans at all.

INGREDIENTS:

1 c. parsley, chopped

½ c. cucumber, chopped

½ c. canned chick peas, drained

1 T. fresh lemon juice

1 clove minced garlic

1 T. green onion, chopped fine

3 T. extra virgin olive oil

½ c. finely diced tomato

1/8 tsp. each sea salt and coarse black pepper

DIRECTIONS:  Chop vegetables and place in medium decorative serving bowl.  Add all remaining ingredients and stir to mix well.  Serve at once with your desired meat.

Peach Streudel

This was the first really sweet think I’ve made in a very long time and it came out soooooo good!  You can lower carbs on this dessert by using raspberries or strawberries, but the peaches and nectarines are just so beautiful right now, I just had to make something with them before the season ends.  This recipe is not suitable until you are well into Phase 2 OWL of Atkins.

INGREDIENTS:

1 recipe my Mozzy Dough (substituting 2 T. sweetener of choice for the garlic/onion powders)

2 large peaches, sliced

¼ c. sugar equivalent of your favorite sweetener

2 T. unsalted butter

1½ tsp. ground cinnamon

OPTIONAL:  1 tsp. vanilla extract

DIRECTIONS:  Preheat oven to 350º.  Line a large baking sheet with parchment and set near your workspace.  Make the recipe of Mozzy Dough per that recipe’s instructions, substituting in 2 T. sweetener for the garlic and onion powders.  If using the vanilla, add it to the dough with the beaten egg.  Press or roll the dough out nearly the length of a 17″ pan, right on top of the parchment paper.  Spread it out about 9″ wide.

I did not peel my peaches but you certainly can if you prefer.  Lay the peach slices down the length of the center of your rectangle of dough, slightly overlapping them.  Leave a little dough uncovered ant the two ends of the strudel dough for closing up.  Sprinkle on the ¼ c. sweetener of choice (I used erythritol).  Sprinkle the peaches with the cinnamon and dot the length of the band of peaches with the butter.  Using the parchment to help you lift the dough, fold one long side of the dough up and over the peaches gently.  Repeat that process for the other long side of the dough, slightly overlapping them if possible.  Gently pinch the ends and long seam of the strudel dough together with your fingers so the peaches and juice won’t ooze out during baking.  Although this next step is not necessary, using the parchment again to assist, I gently rolled my filled strudel so that the seam side was down on the parchment for baking.

Pop into preheated 350º oven and bake for about 18-20 minutes (watch closely as ovens vary).  Remove and with a paper towel, blot away any oozed butter or juices along the edges for a nicer presentation.   Slice into 6 servings and serve warm.

NUTRITIONAL INFO:  Makes 6 servings (cutting into 8 will also lower carbs).  A slice 1/6 of the strudel will contain:

305 cals., 24.3 g fat, 15.45g carbs, 7.41g fiber, 8.04g NET CARBS, 18.25g protein, 376 mg sodium

London Broil

When you want to tenderize a tougher cut of meat, like flank steak or London Broil, you have to marinate it to loosen up those meat fibers a bit.  This is one of my favorite steak marinades to use on London Broil.  If you can’t get flank or London Broil, use a piece of lean chuck roast. The flavor on the outer crust of meat is just divine.  The longer you marinate the meat, the more tender the meat will get.  Marinating all day long is preferred, but a minimum of 4-5 hours is a must lest you end up with a very tough, difficult to chew experience.  My husband cooked ours tonight a bit too long (medium) for our personal taste, as we prefer medium rare, but it was still quite tasty and still fairly tender.  This recipe is suitable for all phases of Atkins beyond Induction.  If you are still on induction, sub in some beef broth for the red wine.

INGREDIENTS:

3 lb. piece of London Broil or flank steak

½ clove garlic, minced

1½ tsp. tomato paste

½ c. red wine (or beef broth if still on Induction)

¼ c. low sodium soy sauce

2 T. balsamic  vinegar

1 tsp. Worcestershire sauce

DIRECTIONS:  Coat the meat with the black pepper and set in a glass or plastic marinating pan.  Add the remaining ingredients, stirring in the tomato paste well until it is evenly distributed in the liquid.  Using a basting brush, drizzle the marinade over the meat and place marinating pan in the refrigerator.  Marinate for at least 4 hours to all day long, drizzling over the meat carefully hourly.  Turn the meat once or twice while marinating.

When ready to cook, prepare a hot charcoal fire.  Lift meat out of marinating pan and discard the marinade.  Place meat directly over the hot coals and grill for about 8-10 minutes on a side or until it reaches your desired stage (around 8 minutes per side for medium rare; around 10 for medium as shown).  These two cuts of meat are really too tough to cook them well done.  Just being honest.  Serve with a nice salad or your favorite green side dish.  This is delicious with compound butter, if you have a favorite recipe.  Here’s the one I used tonight:  Garlic Herb Butter.

NUTRITIONAL INFO:  As the marinade is discarded, a firm count per serving is difficult to arrive at.  No more than 1 T. is consumed on the meat surfaces, if THAT much.  1 T. marinade contains around 1.27 net carbs, so that is what is added to the serving below.

NUTRITIONAL INFO:  Serves 6-7 people nicely (maybe 8), so each serving of meat with 1 T. marinade contains around:

Garlic Herb Butter

 

I love mixing herbs and spices into butter and using them on baked, broiled or char-broiled steak, pork chops or seafood.  This is one of my favorites.  FYI for those not familiar with herb butters, also known as compound butters, they are simple mixtures of softened butter and spices, herbs, seasonings that are then used in a variety of recipes, particularly on meats and fish.  This is a GREAT way to re-invent leftover steak. by the way.  It helps disguise that “leftover” taste that beef, in particular, gets when reheated.  This particular herb butter is also good for making garlic bread on your favorite low-carb bread or roll recipe.  When it comes to herb butters, the sky is the limit as to the different combinations of herbs you can create.  As you’ve probably guessed by other recipes here, I love fresh rosemary, garlic and onion powder and that combo makes a wonderful herb butter for pork done on the grill.  Another combination I’m quite fond of is fresh mint and cilantro.  Be creative and experiment!  This flavorful mixture is Atkins Induction friendly.

INGREDIENTS: 

½ stick salted butter (4 T.)

1/4 c. parsley, chopped fine

1 small clove garlic, minced

¼ tsp. coarse, cracked black pepper

2 T. chives or green onion, chopped very fine

OPTIONAL:  Dash dried tarragon (or a bit of fresh, chopped fine)

DIRECTIONS:  On a paper plate or saucer, soften the butter at room temperature.  Blend/mash all listed ingredients into it with a fork until smooth and uniform.   There are three approaches to serving.  You can (1) serve the herb butter in a saucer at table (reserving 2 tsp.).   You can (2) reserve 2 tsp. and with a small rubber spatula, spoon the rest into the slots of a silicone candy/butter mold, pressing down well (freeze for 20 minutes and pop out the individual servings).  You can also (3) form the butter into a butter-shaped stick or log in plastic wrap, chill and slice off servings at the table.  Your call.

Place 1 tsp. of the reserved butter on top of meat or fish before cooking.  Place your meat or fish in your hot oven, broiler or on charcoal grill and cook to desired stage.  Turn meat halfway through cooking and place remaining tsp. of reserved herb butter on top. Spread with a brush to distribute over the meat/fish.  When your meat is fully cooked to the desired stage, removing to a serving platter and serve at once with the herb butter to garnish.  Let beef set for 10 minutes before slicing to preserve juices inside.  Let your guests serve more herb butter atop their serving at table.  It melts as you eat.  YUM! 🙂

The slots of my candy mold that makes the shape pictured above hold exactly 2T. contents.  This is why I show serving size as 2 T.  But your molds may only hold 1 T. and you can then cut these numbers in half!

NUTRITIONAL INFO:  Allow 2 T. per serving, so this makes 4 servings.  Each serving has:

Chipotle Beef Strudel

This dinner came out utterly delicious!  I’ve been wanting to try a strudel application with my Mozzy Dough and finally did it!  Didn’t tear up; didn’t fall apart, and the full recipe of dough was just the right ratio of dough to filling for this use.  Next I’ll be trying some fruit streudel with it, so stay tuned!  You want to use 90% lean beef in this recipe or drain your beef off VERY well.  This recipe is not suitable until you have reached the grains rung of the Atkins carb re-introduction ladder.

INGREDIENTS:

1 recipe my Mozzy Dough

10 oz. lean ground beef (preferably 90%)

2 oz. onion, chopped

½ tsp. chili powder

¼ tsp. garlic powder

½ c. Ro-Tel tomatoes and green chiles (drained solids only)

3 slices Pepper Jack or Monterey Jack cheese, torn in half

OPTIONAL:  1-2 T. cilantro, chopped to garnish

VARIATION:  On nights you can afford the extra carbs, a band of 1/2 cup canned refried beans added down the middle would be delicious, but that addition isn’t calculated in below. 

DIRECTIONS:  Brown the ground beef and onion together in a skillet over medium-high heat.  Add the chi8li powder and garlic powder.  Stir well.  Add the drained  tomatoes with chiles and reduce heat to medium.  Simmer until tomatoes have cooked up dry.  Remove from heat.

Preheat oven to 350º.  Line an 11×15 baking sheet with parchment and set aside.  Make the Mozzy Dough by that recipes instructions.  Form an oblong “log” of the dough and place lengthwise on the parchment lined pan.  Using a fork or your fingers lightly moistened, gently press into a rectangular shape about 10″x13″ and just under ¼” thick.  Do this carefully so as not to tear the dough.  Spoon the meat filling down the very middle of the dough rectangle, lengthwise, leaving at least 2″ uncovered dough on each long edge you will eventually be folding over the filling.   Next lay the jack cheese slice pieces down the meat filling from one end to the other.

Using the parchment to help you, using both hands, lift up the long edge of the dough up and over the filling.  Do the same with the other side of the dough.  Pull to the center if necessary so you can pinch the center seam of the dough together to seal it.  Pinch each end of the “strudel” as well so filling won’t ooze out.  Again, using the parchment to help handle the strudel, roll it over so it will be seam side down on the parchment-lined pan now.  Bake at 350º for 18-20 minutes.  Keep an eye out at the 15 minute mark, as some ovens cook hotter than others.  Remove when golden brown and garnish with the chopped cilantro.  Cut into 5 portions and serve with a lovely guacamole salad.  The Chipotle Mayo below is optional, but it is super yummy dotted on the top of each bite as you eat the strudel. 

Chipotle Mayo: Stir together 4 T. homemade mayo, ½ c. sour cream, ¼ tsp. chili powder, 1 seeded & mashed chipotle chili pepper (the kind in can packed in adobo sauce) & dash salt. Each tablespoon has about 0.5 net carb.

Cheese Flat Bread

Cheese flat breads for your dining pleasure.  Nice with dinner (baked in a muffin pan) as a roll; nice baked flat for sandwiches.  This recipe is quick to pull together with my Einkorn Bake Mix at the ready, so what are you waiting for?  Get in that kitchen and whip up a batch of these to serve with dinner tonight!  Suitable once you get to Phase 2 grains level of the Atkins carb re-introduction ladder.

INGREDIENTS:

1 c. shredded sharp cheddar cheese

1 c. shredded mozzarella cheese (or use all cheddar, but result will be greasier)

½ c. my homemade Einkorn Bake Mix

2 eggs, beaten

DIRECTIONS:   Preheat oven to 350º.  Line a baking sheet with either parchment or a silicone sheet.  If you would prefer a muffin shape, use a non-stick muffin pan, a silicone pan or oil the slots slightly. I like the flat ones so any leftovers can be used to make sandwiches.  🙂

In a medium bowl, beat the eggs.  Add the two cheeses and the bake mix and stir well until it is uniformly forming a moist ball.  Divide into 6 equal portions and slightly form into balls.  Place on lined baking sheet and slightly flatten (or make into muffins, filling muffin cups with 1/6 of the batter).  For making dinner rolls, you might want to use a muffin pan with large slots for higher rise.  Pop into preheated 350º oven for about 17-18 minutes (20-22  min. if done in muffin pan for rolls) or until they are golden.  Remove and serve at once.

Shrimp Mac and Cheese

I came up with a delightful lunch yesterday.  Both I and my husband liked it so much!  He admitted, he had his doubts it would be like classic mac and cheese when he saw what I was throwing into the pan, but he had to admit it came out very tasty and quite like real noodle-baked mac and cheese,  just with the added shrimp flavor melded in.

This creation is definitely Induction friendly.   I ate a similar dish they dubbed lobster macaroni at a little café in the Virginia Tidewater area many moons ago when I was in high school.  Their dish had some red and green bell pepper in it as well, so it was considerably more colorful.  So you might like to try this recipe one day with lobster tail meat (maybe two tails, chopped into bite-size chunks) in it in place of the shrimp here.  🙂

INGREDIENTS:

16 oz. fresh or frozen cauliflower

4 T. butter

16 oz. peeled shrimp (or lobster meat)

2 oz. cheddar cheese shreds

2 oz. American Deluxe cheese, shredded

3 oz. chopped green onion

Dash of my Seafood  Spice Blend

DIRECTIONS:  Cook cauliflower in your usual manner (or per instructions on the frozen product bag).  Drain well in a colander in your sink while you put everything else together.  Melt butter in non-stick skillet and sauté shrimp until just barely opaque and done.  Press the cauliflower slightly with the back of a spoon to get out any remaining water.  Add green onion, cauliflower and spice to the shrimp in the skillet.  Stir well.  Top with cheese and pop into 350º oven for 15 minutes.  Remove and tilt pan over sink to spoon out any remaining water that has still bled out of cauliflower (it always does for me).  If any, bake 10 minutes longer and serve with green salad.  Otherwise, you can serve at once.

Mini Bean “Soft Tacos”

Although not an authentic Mexican dish, these have become quite popular at my house!  Therefore I thought I’d include them in my Mexican Food celebration.  Doesn’t get more Mexican than beans, cheese and jalapenos!  These finger treats are just a new way to enjoy those key ingredients!

This “wrap” is soft yet substantial enough to pick up and eat with your hands.  These are not at all crisp.  hese are great for snacks or to serve at parties.  If you don’t eat pork rinds, you could sub in some low-carb bake mix instead, but numbers below would change and texture as well.  The only way I can afford the carbs in beans is by using 0-carb pork rinds to make these. 

Boy, oh, boy, were these ever good!  Ended up the jalapeno pepper I used was too hot for me and I had to pull some of it off mine, but this was a nice snack served warm.  You should be able to reheat these quite nicely, too.  This recipe is not suitable until you reach Atkins Phase 2 and are at the starchy vegetable rung of the carb-reintroduction ladder in that phase.

INGREDIENTS:

1½ c. shredded Cheddar cheese

2 T. cream cheese

½ tsp. chili powder or Taco seasoning

1 egg, beaten

1½ c. pork rind flour

2/3 c. canned refried pinto beans

¼ c. Monterey Jack Cheese

1 medium jalapeno, seeded and sliced into very thin rounds

VARIATION:  Add 1 T. taco-seasoned browned ground beef atop the beans before finishing construction.

DIRECTIONS:   Line a sheet pan with parchment paper and set aside.  Preheat oven to 375º.  In your microwave, melt the Cheddar cheese, cream cheese and chili powder in a glass bowl for about 1 minute on HI.  When fully melted, remove and stir once.  Add the beaten egg and pork rind flour.  Quickly stir together vigorously with a fork until ingredients appear to be uniformly distributed and it forms a uniform ball of dough that pulls away from the sides of the bowl.  Divide into 10 equal portions, slightly roll into a ball and with fingers, press onto parchment in 2″ circles that should be slightly thinner than 1/4″. If sticky to work with, dampen your fingers with a bit of water.

Pop into 375º oven for about 7 minutes or until dry in the center to your finger touch.  Remove from oven and spoon 1 T. beans onto each dough round.  Spread beans out a bit but not all the way to the edges of the dough circles.  Carefully do this as the dough is still very soft and not fully cooked.  Place 2 slices of jalapeno on each one (or 1 if you don’t like things spicy).  Garnish each dough round with about 1 tsp. Jack cheese.  Pop pan back into oven and bake these for about 10 minutes more or until beans have had a chance to warm up and the Jack cheese is melted.  Remove from oven and fold them in half.  Press slightly in middle so they will stay folded.  Serve warm.  I suspect these would reheat nicely in your oven set at 350º.

Turkish Pide (pronounced pee-day)

Although a traditional Turkish treat, they make something similar to this meat-filled flatbread in several Middle Eastern countries.  The seasoning used varies from country to country.  This dish is often served at Ramadan when the feasting begins.  Classically, it is made with wholewheat flatbread dough, but mine is made with my Mozzy Dough to keep it lower-carb.  I just chose spices and herbs reminiscent of our days in Teheran, as my Mom didn’t bring a recipe for this dish back to The States.   The chosen seasonings here are typical of many Middle Eastern recipes.  My husband ranted about this at lunch today! 

This recipe is not suitable for Atkins Induction as the dough has a small amount of flour product in it (Carbquik).   Although this is a main course, it can be served in smaller portions as a pizza-like snack.  It is substantial enough to require a plate, fork and knife to eat, however.

INGREDIENTS:

½ recipe my Mozzy Dough

8 oz. lean ground beef (or lamb, for more authentic version)

2 oz. onion, finely chopped

15 cherry tomatoes (or San Marzano minis), chopped

3/4 c. parsley, chopped

¼ tsp. each: dried mint, dried fenugreek leaves, my Baharat Spice Blend

¼ tsp. each salt and coarse black pepper

DIRECTIONS:  Make the Mozzy Dough per that recipe’s instructions, reserving half the dough for another use.  It freezes well in a plastic baggie.  Roll the dough into a fat canoe shape about 12″ x 7″ on a parchment lined sheet pan.  Set aside.

Preheat oven to 375º.  Brown the beef (or lamb) in a skillet with the onion.  Add the parsley and all seasonings listed above.  Cook over medium-high heat for a few minutes to tenderize the onions.  Remove and spoon evenly into the “canoe” of dough, leaving a good inch of dough free of filling.  Sprinkle the chopped tomatoes on top.  Fold the uncovered dough up over the meat to create the sides of the “canoe”, pinching the pointed ends together with your fingers to help maintain the “canoe” shape.  Traditionally, they sprinkle sesame seeds on the sides of the “canoe” dough before baking but I did not, as the hubs isn’t fond of seeds on/in breads.    Pop into 375º oven for about 20-25 minutes or until begins to brown.  Remove from oven and cut into four equal portions.

Grilled Steelhead Trout

We were in Sam’s a couple days ago and bought a pack of huge Steelhead Trout fiilets.  We enjhoyed them so much last year when we tried it for the first time, I decided do some on the grill for the Fourth of July.  Here’s a nice article on Steelhead Trout if you’re not familiar with this species that is closely related to salmon: Steelhead Trout

I will be doing it this time without the parsley added to the baste since I’m out of parsley, Oh, My!  May try it with cilantro or dried chervil today instead.  My husband isn’t too fond of salmon but he definitely likes Steelhead Trout! It is, in our opinion, much milder than salmon.  The skin of ths fish isn’t as “tough” as salmon skin either, so I actually eat it on this fish, whereas I will not do that with salmon skin unless charred very crisp.  When your husband, a lifetime fish hater, asks for seconds, you KNOW it’s gotta be good!!!  It is simply DELICIOUS!

This recipe is suitable for all phases of Atkins, all Keto diets, and Primal Blueprint as well.  Paleo followers will want to clarify the butter.   I like to make fish tacos with any leftover fish that is smoked.  🙂

INGREDIENTS:

1 lb.10oz. (approximately) filet of Steelhead Trout

6 T. unsalted butter, melted

1/3 c. parsley, chopped (or fresh cilantro)

2 lg. cloves garlic, minced

3/4 tsp. my Seafood Spice Blend

VARIATIONS:  Use different spice blends in lieu of the Seafood Blend shown.  You can also add 1-2 T. white wine to the sauce for a different flavor twist.

DIRECTIONS:  In small saucepan/skillet melt the butter.  Add garlic, spice blend and parsley.  Heat low for 2-3 minutes and remove.  Baste the skin side of the fish and let it sit on the counter while you prepare the charcoal fire as for grilling steaks.  You want to cook these hot and fast.  They will only take 5-6 minutes on a side.  When the fire is hot, Place the fish filet on the grate  skin side down.  Next baste the top side of the fish.  Bring leftover butter baste in the house to keep hot on the stove for serving at table with the meal.  Using an extra-long spatula gently flip the fish after 5-6 minutes.  Grill the second side of the fish for 5 minutes and it will likely be done.  You don’t want to overcook or dry it out.   Test for flakiness at the thickest part to be sure it is done.  Using an extra long spatula (or 2 shorter ones) carefully remove to a large platter.  Serve with the extra butter sauce reheated if cooled off (melt more butter if need be).  Lovely served with sweet potatoes and a green veggie or salad.  My Chipotle-lime “Sweet Potatoes” go particularly well with grilled fish, as does steamed, buttered broccoli or asparagus spears.

Einkorn Pineapple Sweet Potato Logs

All I can say is YUM!  Although I made these tasty treats using a non-stick Twinkie® pan, you can just as easily make these into muffins, mini-muffins or even a square cake and cut into 12 portions.  You’ll have to do some re-calculating of carbs for different shapes.  The square cake will probably take 30-35 minutes to bake fully.  Test with a toothpick in the center.  The count below is for the Twinkie® shape, each of which which has 3 tablespoons of batter. These are delicious with morning coffee or for a lunch-box or after-school snack!

Mine tried to stick to my non-stick pan a bit, so be sure to oil your pan and cool them off before attempting to loosen and remove from the pan.  This recipe is not suitable until you reach the grains rung of the Atkins OWL carb re-introduction ladder.

To lower carbs, you will want to sub in a lower-carb bake mix and definitely sub in pumpkin for the sweet potato.  I just happened to stumble on 1/2 c. sweet potato in my freezer this week that I wanted to use up.  I figure if I don’t know how long it was in the freezer, best I use it right away.  I will probably use pumpkin next time myself to lower carbs on these.

INGREDIENTS:

1½ c. my Einkorn Low-Carb Bake Mix

¼ c.+2T. Pineapple Sugar-Free Syrup (I used DaVinci)

1 beaten large egg

½ c. sweet potato, cooked and mashed

DIRECTIONS:  Preheat oven to 350º.  Oil a Twinkie® pan or muffin pan.  Set aside.  In a medium bowl, mash the cooked sweet potato with a fork.  Whisk in the egg and pineapple syrup until smooth.  Finally stir in the bake mix with a rubber spatula to scrape down the sides of the bowl, until all is well-blended.  Using a tablespoon measure, spoon 3 T. batter into each slot of the pan.  If any leftover, top any off that are under-filled.  Pop into 350º oven for 20 minutes.  Cool slightly before attempting to remove from pan.

Taste of Italy Casserole

I wanted to try baking my wonderful glucomannan dumplings recipe into a casserole tonight, something Italian, but not quite lasagna.  This delicious dish was born!  My husband dipped up seconds, so I  KNOW he liked it (as did I).  Super yummy!!  It only took 20 minutes to put together, as I had the spaghetti sauce in my freezer which I had thawed in the morning.  I’ve made my dumplings so many times I can make that dough almost blindfolded in 5 minutes flat!  This dish is suitable for all phases of Atkins, Keto and Primal diets alike, however it’s not suitable for Paleo due to the heavy dairy.

INGREDIENTS: 

1 recipe my Peggy‘s Original Dumplings

2 c. low-carb spaghetti sauce with meat (I used my bolognese sauce)

8 oz. cream cheese, softened

2 beaten eggs

2½ c. French-style frozen green beans

2 c. shredded mozzarella cheese

3 links Italian sausage (12 oz.), cut into chunks

DIRECTIONS:  Preheat oven to 350º.   Lightly oil a square glass/ceramic baking dish (mine was Pyrex 8″).  Be sure your dish is as deep as a Pyrex dish as this casserole is “tall” in the pan.

In a medium bowl, make the dumpling dough per that recipe’s instructions and let cough sit on a sheet of plastic wrap or a pliable silicone sheet for 3-4 minutes.  Roll dough between plastic sheets or pliable silicone sheets (1/8″-3/16″ thick) to the shape of the bottom of your dish.  Remove top plastic/silicone sheet.  Carefully pick up and lay dough in the bottom of your baking dish.  Slowly remove the remaining piece of plastic.  NOTE:  You can cut your dough to fit the pan bottom exactly and freeze any cut off bits in plastic for making little dumplings to toss in your next pot of vegetable soup!  That is what I actually did, but there was only about 2-3 T. cut away. 

In a medium saucepan, bring green beans to a boil in water, lower to a simmer and just half cook them.  Drain off all water you can, slightly squeezing the beans.  Set aside when done.

Spoon the spaghetti meat sauce evenly onto the layer of dough in the pan.  In a small bowl, soften the cream cheese in the microwave to a very soft stage.  Whisk in the eggs until fairly smooth.  Spoon that mixture onto the meat sauce layer.  Now spread the green beans on top of the cream cheese layer.  Next add the mozzarella cheese.

In a skillet, lightly brown the sausage chunks and remove from heat.  Place the “meatballs” atop the casserole.  Cover tightly with foil and pop into 350º for 1 hour.  Remove foil and bake another 10-15 minutes or until the mozzy is beginning to brown and the tops is bubbling.  Serve at once with you favorite garlic bread and/or green salad.

Einkorn Onion-Dill Biscuits

My mother used to make a yeast bread recipe for Onion-Dill Bread when I was in high school.  We loved it!  I was thinking of that today and wondered if it could be done as a biscuit.  Thought that might be good with our dinner tonight, so I took my Einkorn RWS Biscuit recipe and tweaked it a bit to add the requisite cottage cheese and flavorings this bread is famous for.  Well we both gave it a thumbs up!  A definite keeper.  Slathered in butter these are divine!  These would not be suitable until you are in Pre-Maintenance or are near/at goal weight due to the Einkorn and Carbalose flours in them.

INGREDIENTS:

2 c. my Einkorn Bake Mix

½ c. shredded Monterey Jack or Mozzarella cheese

2 large eggs, beaten

4 T. Resistant Wheat Starch 75 (I order at Netrition.com)

¼ c. cottage cheese

½ tsp. each dried dill weed and onion powder

2 T. Carbalose flour to help form shapes

DIRECTIONS:  Preheat oven to 350º.  Place parchment or a silicone sheet on your baking pan and set aside. In a large mixing bowl, measure out 2 c. my bake mix.  Stir well with a fork rework any shortening lumps until the mix is again the texture of grainy cornmeal.  Add all remaining ingredients but the Carbalose flour.  Stir dough with a rubber spatula and form into a ball.  Dust the dough and your hands lightly with Carbalose flour and knead the dough 4-5 times.  Form dough into a log and cut into 7 equal portions (about ½ c. batter each).  Form the seven dough into smooth balls (dust Carbalose on your hands again if needed) and set them on pan spaced evenly.  Slightly flatten the tops to create a 1″ tall x 2″ wide biscuit shape.  Pop pan into 350º oven for 15-17 minutes or until dry to touch in center and lightly browned.  These rise up nicely and spread modestly during baking.   🙂  Serve hot with butter. Leftovers should keep nicely for a week in the fridge in a plastic bag or in the freezer for up to a month.

Mexicali Smoked Sausage Medley

This is one of those concoctions that doesn’t photograph too well, but it sure tasted good!  I had a small piece of smoked sausage leftover in the fridge I wanted to use up for our lunch today and this is what I came up with.  I went kind of light on spices, but it still had a distinct, yummy Mexican flair from the chili powder and cumin.  We both enjoyed this and I will make this one again.  It sure went together fast.  This recipe is suitable for all phases of Atkins and other Keto diets.  Primal and Paleo devotees can also enjoy this one!

INGREDIENTS:

1 T. bacon grease

2 oz. onion, chopped

6 oz. smoked sausage, sliced

8 oz. zucchini, sliced (I used calaba squash, zucchini’s cousin)

2 oz. red bell pepper, sliced

1 Roma tomato, diced coarsely

1/8 tsp. each chili powder, garlic powder & cumin

½ c. each Monterey Jack and Cheddar cheese

½ c. cilantro, chopped

VARIATION:  Substitute 1/2 lb. ground beef or crumbled breakfast sausage for the smoked sausage and you will have two totally different ways to prepare this dish. 

DIRECTIONS:   Preheat oven to 350º.  Melt bacon grease in skillet over high heat.  Add onion and saute until begins to brown.  Add squash slices and stir-fry until it, too, is beginning to brown.  Add the sausage slices, bell pepper and tomato.  Lower heat and add the spices and stir well.  Saute just a few more minutes and remove from heat.  You can bake/serve in this skillet or you can transfer to a lightly oiled baking dish.  Sprinkle the cilantro and both cheeses evenly on top.  Pop into hot 350º for about 20 minutes or until cheeses are melted and flavors have melded well.  Remove and serve at once.

Montreal Green Beans

Montreal Green Beeans“When trying to stay as low-carb as possible each day, salads and vegetables are de rigueur.  This dish is a quick, simple, delicious way to prepare green beans your family is going to love.  I know a lot of people don’t like mushrooms, so if you have mushroom haters in your family, just omit and either double the amount of beans or sub in slivered onions.  Either way, you will love these nicely seasoned, garlic-y beans.  They were a lovely side with our grilled rib-eye steaks last night.  This recipe is suitable for all phases of Atkins, Keto programs, Primal and Paleo tenets.

INGREDIENTS:

3 T. unsalted butter

2 c. green beans, trimmed and cut into 1½-2″ lengths

4-5 medium mushrooms, sliced (or yellow onion, sliced)

1 large clove garlic, minced

Couple shakes each sea salt and coarse black pepper

¼ tsp. my homemade Montreal Steak Seasoning

DIRECTIONS:  Place beans in saucepan with enough water just to cover.  Bring to boil and then simmer just until tender-crisp.  Drain off water.  Add butter, garlic, salt, pepper to the pan and saute beans over medium-high heat until they are just about done.  Add the Montreal Steak seasoning and mushroom slices to the pan.  Stir-fry just until mushrooms are no longer opaque, stirring occasionally.   Serve at once with grilled steak, pork,  seafood or whatever you like.

Mediterranean Roasted Chicken and Cauliflower

I just love roasted vegetables and this combination is a new one for me.  First time I’ve roasted cauliflower.  Very tasty!  Not sure it’s my personal favorite way to have cauliflower, but it was certainly delicious.  I know many just rave about roasted cauliflower, so this recipe should be their cup of tea.  And it’s so easy.  The luscious, garlic-y aroma from the kitchen while it bakes really gets your appetite going!  This recipe is suitable for all phases of Atkins, Keto diets and Primal/Paleo as well.

INGREDIENTS:

6 pieces of chicken, your choice (1 lg. breast, halved, 2 drumsticks, 2 thighs)

2 large plum tomatoes, cut in wedges

6 large flowerets cauliflower (I used 1 small head cut in 6 pieces)

4 oz. yellow onion, sliced lengthwise

6 cloves garlic, chopped coarsely

½ tsp. oregano leaves, dried, crushed

1/8 tsp. coarse black pepper

¼ c. extra virgin olive oil

OPTIONAL:  Juice of 1 small lemon

DIRECTIONS: Preheat oven to 375º.  I actually roasted mine on “convection/roast”.  Place chicken pieces on large baking pan with space between the pieces.  Place tomato wedges between the chicken pieces.  Add the cauliflower chunks evenly in the pan.  Finally poke the garlic between items.  Lay the slices of onion among and on top of the meat pieces.  You want a few of those to brown off while cooking, for the rich flavor they will acquire in browning.  Drizzle the olive oil and lemon juice (if using) evenly over everything in the pan.  Sprinkle evenly with the pepper and oregano.  Pop pan into 350º oven and bake/roast for about 1 hour – 1hr. 10 minutes or until chicken pieces are fully done.  If you’ll make a cut into the thickest parts of the chicken pieces, they will cook faster and take only around 45 minutes.  Ovens vary, so keep and eye out and lower temperature to 350º if you think the food is browning too much way before the meat is done.  Remove and serve with a fresh green salad topped with an Italian or Greek dressing.

Pork Loin with Curried Pumpkin

I know they add pumpkin chunks to curries in India and have always wanted to try pumpkin in an Indian dish.  We love Indian food so.  So I got creative tonight for our pork loin.  Took out my last remaining quart ziploc bag of frozen pumpkin made during the holidays this winter and defrosted it in a sieve over a bowl, allowing water to drain off.  I emptied the water numerous times throughout the afternoon and removed about 2½-3 c. total.  If you don’t drain off or squeeze out the water (using a sieve or kitchen towel to wring it), your final pumpkin recipes will be ruined, as it WILL bleed out and make a wet mess of whatever you are making.  Just a fact.

Do not use canned pumpkin to make this recipe as it won’t be very good, I fear.  This tasty dish gets a two thumbs up from both of us!  The hubs said this was one he’d like again!!  I’m really getting pretty good at this Indian food thing!   🙂  I order my Indian spices from Penzey’s on-line.  This recipe is suitable for all phases of Atkins and other Keto diets.

INGREDIENTS:

1 T. coconut oil

½ tsp. each: cumin seed, nigella seed, ground cinnamon and my Garam Masala

¼ tsp. each:  Asafoetida powder (or 1/2 clove minced garlic), turmeric, curry powder

3 dashes cayenne pepper (only gave it a slight bite)

2 oz. onion, chopped

Few light sprinkles of pure stevia powder (I use KAL brand), or sweetener to taste

½ tsp. maple extract mixed into 2 T. tap water (or 2 T. sugar-free maple syrup)

1/4 tsp. sea salt

3 c. pumpkin flesh, cooked (if frozen, drain in sieve for 1-2 hours over bowl)

1 c. cilantro (coriander leaves) chopped

1 lb.  boneless pork loin cut into 4 small chops

DIRECTIONS:  Either cook your pumpkin fresh or use frozen pumpkin from your freezer.  If using frozen, you will have to drain off the water for a couple hours.  I use a sieve over a bowl for this, but you can defrost and squeeze it out in a clean kitchen towel if you prefer.  Set aside.

Heat the coconut oil over medium-high heat.  Add all the spices and let them cook 1 minute.  Add the onion and saute until they are pretty soft.  Add the drained pumpkin flesh and stir the mixture well to incorporate the spices, onion and pumpkin evenly.  Add in the chopped cilantro and stir again.  Add the butter, stevia, maple flavoring and salt and stir to facilitate melting of the butter and uniform blending.  Lower heat to lowest setting and shift your attention to now browning the pork.  Occasionally, using spoon or spatula, flip or stir the pumpkin mixture several times while you brown the pork.  This will facilitate further flavor melding.

In another skillet lightly coated with oil, brown the pork on both sides until completely done, or about 7-8 minutes on a side.  I dusted mine with black pepper as well.  As I was planning to serve this meal with steamed spinach, I just made a bed of that on the bottom of my serving platter.  The spinach could be served separately as well.  Next spoon the pumpkin mixture onto your serving platter.  Lay the pork loin on top and serve at once.

VARIATION:  Cream the spinach either in the traditional manner or my linked Indian version.

Tamale Pie

My mother used to make a dish she called Tamale Pie that had a wonderful cornmeal masa topping that was baked on top.  I just loved this dish.  Well cornmeal is so carb-pricey I just won’t use it anymore.  But I tinkered around with my Mom’s old recipe and came up with a tasty low-carb version.  This casserole is pretty darn close to the original recipe in flavor (if not appearance).  This recipe is not suitable until Phase 2 Atkins since it has baby corn in it.  If you omit the corn, it’ll be a good dish, but not really classic Tamale Pie.  Just being honest.

INGREDIENTS:

14 oz. lean ground beef

3 oz. onion, chopped

2 Roma tomatoes, coarsely chopped (or half a 15-oz can crushed tomatoes, drained)

1 tsp. chili powder

1 tsp. dried ancho or guajillo chilies (both are mild), seeded and chopped

2¼-oz, pitted black olives, sliced and drained

¼-½ c. tap water (only if mixture seems a little dry)

6 oz. cheddar cheese, grated

1 clove fresh garlic, minced

¼ tsp. salt

15 oz. canned baby corn, drained, divided in 2 portions (half sliced, half not)

2 large eggs

½ c. almond flour

2 T. flax meal

1 tsp. corn bran (I order from Honeyvillegrains.com)

¼ c. heavy cream

DIRECTIONS:  Preheat oven to 350º.  You will need a medium casserole dish for this recipe, but no greasing will be necessary.

For the bottom meat filling:  Brown meat over med-high heat until it releases its grease.  Drain off excess into your casserole dish and rub surfaces with it.  Add onion, garlic, salt, chili powder and crushed ancho chilies to the meat mixture.  Sauté the mixture until onion is getting tender.  Add tomatoes, olives and the half of the baby corn (what you sliced).  Sauté until tomatoes are getting soft and releasing their juices.  Add listed water only if mixture seems a little dry.  Simmer 5 minutes longer to allow flavors to blend.

For the “masa” topping:  Blend or pulse the remaining half of the baby corn until smooth in a food processor or blender.  Add almond flour, flax meal, corn bran, cream and eggs and pulse until you have a smooth batter.

Pour the meat-veggie mixture into your greased ceramic casserole dish.  Sprinkle the cheese over the meat layer.  Then gently spoon the topping over the meat mixture.  Bake at 350º for 20 minutes or until topping is just cooked in the middle (just dry to the touch) but not really browned.   Serve with a nice sliced avocado lightly dusted with garlic powder or your favorite guacamole salad.

Tex-Mex Pepper Pot Soup

Tex-Mex Pepper Pot Soup

I have a tri-color pack of bell pepper in the fridge and got this soup idea for our lunch today from a photograph I saw on the internet today.  This isn’t a classic Pepper Pot, but with all the peppers I put in this, I’m going to call it my Tex-Mex version of a classic recipe (Google Pepper Pot for the original dish).  I also had 1 can of Eden brand soy black beans on hand which are so low in carbs (unlike regular black beans), I decided to throw them in the pot for good measure.  Good decision, as they made this delicious soup very filling!  They are not listed in the ingredients and are not calculated in the numbers below as I know many are opposed to consuming soy beans or any soy products.  This recipe is not suitable until you are in Atkins Phase 2, but omit the beans and you can enjoy it while still in Induction Phase.

INGREDIENTS:

1 lb. lean ground beef

4 oz. onion, chopped

4 slices thick bacon, coarsely chopped

½ c. each coarsely cut up red, yellow and green bell pepper

1 c. celery with leaves, sliced

1 c. each parsley and cilantro, chopped

6 plum tomatoes, diced very large

4 c. beef or chicken broth

1 tsp. chili powder

½ tsp. chipotle chili powder (or more regular chili powder)

½ tsp. ground cumin

3 T. rice wine vinegar

½ tsp. each salt and coarse black pepper

VARIATION:  Add 1 seeded, chopped jalapeno for a spicier soup.

DIRECTIONS:  Brown the bacon in a large soup pot over high heat.  Add the onion and stir-fry until it begins to caramelize.  Add crumbled ground beef and brown until no longer pink.  Add all remaining ingredients.  When all comes to a boil, lower heat and simmer for about 20-30 minutes or until celery is tender.  Serve at once with a garnish of a few sprinkles of cheddar cheese if desired.

214 cals., 13.3g fat, 5.82g carbs, 1.86g fiber, 3.96g NET CARBS, 17g protein, 296mg sodium.

  • If you add the can of Eden soy black beans, it adds 3 net carbs to the entire batch or 0.37 net carbs to a serving, so only a trace number change. 🙂

Rind-Korn Biscuits

These biscuits were inspired by a recipe of Widget (on Low-Carb Neighborhood forums).  She developed a biscuit that uses almond flour and pork rind flour.  I have been meaning to try them for ages but simply have not.  So this morning was the day.  But I decided to put my experimenting cap on.  First off, I added a little Einkorn flour for the flour-y flavor and texture it brings to baked goods.  Second, I could tell that they were going to be way to sweet for our taste, so I reduced the sweetener by a whopping 2/3!  I also got 7 biscuits and surprisingly had to cook them quite a bit longer.  The only other change that I WISH I had made, was to not use a silicone muffin pan.  I like my biscuits brown on top and bottom.  So I encourage you to use a metal pan if you try these.  These are so delicious I will definitely be making them again.  I also like that the recipe only makes 6 biscuits, as I personally don’t care for re-heated low-carb biscuits.  They dry out too much in my opinion and sometimes give off a taste of the leavening with reheating.  These biscuits are not suitable for those still on Atkins Induction or very early in their weight-loss journey.  That said, you can eliminate the Einkorn flour, making them more like her original recipe, and enjoy them as soon as you get to the nust level of the Atkins carb re-introduction ladder.

DIRECTIONS:  Preheat oven to 350º.  Lightly oil 7 cups of a muffin tin.  Soften cream cheese and whisk it smooth.  You don’t want any lumps in it.  Whisk in the eggs until the mixture is creamy smooth.  Add in all dry ingredients slowly, whisking between additions.  Spoon the batter into 7 oiled cups equally (about 3 T. batter per slot).  Tap pan on counter to release any air bubbles.  Pop into 350º oven and bake for 20-25 minutes (ovens can vary) or until lightly golden on top.  Remove and serve hot with butter and your favorite jams or jelly.

Creamy Sausage and Gnocchi

I tried a new gnocchi dish tonight for dinner with my dumpling recipe.  Wasn’t sure how it would taste with smoked sausage, but we both really liked it.  I just love gnocchi in creamy sauces!  These soft pillows of yummy texture came out perfect once again.  It’s simple to put together, but you do have to watch two pots at the same time, which is always a juggling act.  I’ve made my dumplings recipe so many times now, I could make them blindfolded, so I managed this just fine.  This recipe is suitable for all phases of Atkins provided those still on Induction omit the white wine.  I found a bottle or Reisling in the fridge so that is what I used tonight in this creamy sauce.  Mmmm, with a nice green Italian salad, this was marvelous!.

INGREDIENTS:

1 recipe Peggy’s Original Dumplings dough

10 oz. smoked sausage, sliced

3 oz. yellow onion, sliced

1 c. parsley, chopped

1 small can (about 1/2 c.) sliced mushrooms, with juice

2 T. tomato paste

1 tsp. my Homemade Montreal Steak Seasoning

1/8 tsp. coarse black pepper

¼ c. white wine  (omit if still on Induction)

1 c. heavy cream

VARIATIONS:  Instead of smoked sausage, use sliced Italian sausage, little balls of browned breakfast sausage, or grilled/baked chicken chunks would also be delicious in this sauce.

DIRECTIONS:  It is key to have all ingredients prepared and right by the stove ready.  As I said above, you have to watch two pots at the same time for this recipe.  🙂  Prepare the Dumplings recipe wet and dry ingredients in separate containers as specified in that recipe.  Place a piece of plastic wrap or silicone sheet by them.   Stir the dry into the wet ingredients with a fork and rubber spatula.  When the dough has formed a ball and has thickened up nicely, make 20-24 small balls of dough about the size of a marble in the palms of your hands (I got 22 but mine could have been a tad smaller 😉 ), roll and set down on silicone/plastic sheet.  Press them slightly flat.  Let them just rest until water comes to a boil.  Place a 4 qt. saucepan of water on to boil.

While it is coming to a boil, in a skillet lightly brown the sausage and onion over medium high heat.  Add the wine, parsley and mushrooms with juice.  Add pepper and Montreal Steak mix.  Simmer as you wait for that water pot to come to a boil.  Lower heat to lowest setting possible and add cream.  It will simmer and reduce, thickening it a bit.  Add a light dusting of your favorite thickener if you want your thicker.  I did not.

Water should be boiling by now.  Carefully (lest it splatter on your arms) drop the flattened gnocchi into the water.  That will usually cool the water down to a simmer, but also lower heat so it is definitely at a very gentle simmer.  Cover tightly and set a timer for exactly 10 minutes. DO NOT LIFT THE LID for this 10 minutes or the gnocchi will get what I call “packy” or dense/hard.  When the timer goes off, remove lid and with a slotted spoon, gently lift and drain them off (I tap spoon on paper toweling) and then add to your sauce skillet.  Stir gently once or twice and serve at once.  Alternately, you can dip the gnocchi into a large, deep serving platter and spoon the sauce over them if you prefer.

Asian Chicken Salad with Peanut Dressing

This recipe is an older one on my site, but it is so good and has been so popular, I thought I’d re-share it for those who missed it the first time around.  I love this recipe in the summertime!  It’s so easy to prepare and simply DELICIOUS!  Best of all, no oven required to heat up your kitchen.  Summer in Texas forces us to think about such things.  We’re already averaging 98º-100º daily! Lord what will July and August be like this year in Central Texas?  I don’t mind doing a quick skillet sear, but don’t want to turn that oven on very often in summer.   This salad is is just perfect for Texas summer weather and is suitable for all phases of Atkins and Keto diets as well.

INGREDIENTS:

1 large chicken breast, skinned (8 oz.)

1 T. butter

2 T. lime juice

2 T. rice vinegar

1 T. olive oil

1 tsp. sesame oil

1 tsp. hot sesame oil (or 1/8 tsp. Sambal Oelek chili sauce, or Sriracha)

2 drops liquid stevia

1/2 tsp. low-sodium soy sauce, tamari or coconut aminos

1 T. peanut butter

4 c. Napa cabbage, shredded (or mixture of lettuce or cabbage slaw mix)

½ c. fresh cilantro, chopped

2 large green onions, chopped

½  carrot (5″) shredded with a carrot peeler

1  fresh jalapeno, seeded, sliced in thin strips 1″ long

DIRECTIONS:  Slice chicken diagonally into smaller pieces for quickest cooking.  Heat butter in skillet and sear chicken well on all sides.  Remove and slightly cool.  Alternately, you can use leftover grilled chicken as I did in photo above.  Slice into smaller slices if desired.

For the dressing, whisk the next 8 ingredients together in a small bowl and set aside for flavors to develop.

In a large bowl or on your cutting board, shred cabbage and place in large bowl.  Add grated carrot, cilantro, green onion and chopped jalapeno.  Toss well and plate greens equally on two plates.  Top each with half the chicken meat.  Provide dressing in individual cups on the plate for each person to add as they please.

Chipotle-Jack Chicken Cutlets

There was such a ginormous chicken breast in the package my husband brought home yesterday, the one alone would feed 4 people.  So this is what I made for lunch today with the monster.  I wanted a Mexican food flavor, so I came up with these tasty cutlets.  This dish is quick to make and your family will love it!  If you’re not a fan of pork rinds, substitute almond meal instead.  This recipe is suitable for all phases of Atkins and other Keto diets.  Paleo followers would have to delete the cheese.

INGREDIENTS:

12 oz. boneless, skinless chicken breasts (four)

1 tsp. my Smoky Chipotle Spice Blend

2 oz. crushed pork rinds (about 1½ c.)

2 T. unsalted butter

3 oz. pepper jack cheese (3-4 slices)

OPTIONAL SAUCE:   Some homemade mayo with a bit of the chipotle spice blend stirred in, to be served at table.

DIRECTIONS:  Preheat oven to 350º.  Crush pork rinds (or use almond meal) in a blender, processor or in a plastic bag.  Remove any big, hard bits.  Add the spice blend and mix well.  I used one single, huge chicken breast and cut up into 4 equal portions.  If you buy the ready-cut boneless, skinless breasts (I never have), probably 4 of those will serve 4 people nicely.  Sprinkle the spice-crumb mixture evenly on both sides of the chicken.   Heat a skillet over medium-high heat and melt the butter.  Add the chicken pieces and brown nicely on all sides.  Chicken will likely be nearly done by then.

You can bake this dish in the skillet if it has a heatproof handle or you can place the pieces of chicken into a baking dish.  Top the meat decoratively with the pepper-jack cheese and pop into a 350º oven for about 15-20 minutes or until cheese is well-melted.  Chicken should be fully done by then.  Serve with a green salad or your favorite guacamole.  I added a top dressing to my chicken made of homemade mayo stirred up with a bit of the chipotle spice blend.  It was VERY good on top of my chicken.  That sauce also makes a tasty salad dressing for a green salad. 🙂

Sausage Ball Hash

I bought a beautiful bunch of big red radishes at the store this week expressly to use them for a breakfast “potato” sub dish.  This is what I made with them today.  Very tasty little dish.  I used the entire 10 oz. bunch (which was a bit much, we decided) and next time will use only about 6 oz. and reflect that change in the instructions/stats below.    This was a very pleasant change from the same old scrambled eggs and bacon, or scrambled eggs and sausage I usually fix in the morning.  This dish is suitable for all phases of Atkins and Keto diets.

INGREDIENTS:

3 large eggs, beaten

2 T. bacon grease

3 oz. onion, coarsely chopped

6 oz. pork bulk sausage

6 oz. red radish, cut large ones into halves

Dash each sea salt and coarse black pepper

DIRECTIONS:  Roll sausage into mini balls about 3/4″ in size.  Set aside near stove.  Chop onion and do the same.  Rinse and trim radishes, cutting any oversize ones into halves or quarters.  Leave small ones whole.  Set radishes aside as well.

In a small lightly-oiled or non-stick pan, scramble the eggs.  Do not break them up too much as you flip chunks of them over.  Remove from heat and with your spatula or spoon, break them up into large bite-sized chunks.  Set the eggs aside for now.

In a large non-stick wok or large skillet, heat the bacon grease over high heat.  Add the onion first to the pan and stir-fry until the onions brown a bit and are fully caramelized.  Add the radishes and stir fry until they are getting translucent and tender.  Let them brown a bit as well as this improves their flavor.

Finally add the sausage balls around the edge of the radish-onion mixture but do not disturb with your spatula/spoon.  When they are beginning to brown on one side and firm up, gently shake the pan to let them roll around (still on the edge of the veggie mixture) ant they will start to brown on the other sides.  Gently shuffle the pan until the balls appear to be fully firmed up and then you can gently stir them into the radish mixture.  When the meat appears to be fully done, add the salt, pepper and egg chunks.  Gently mix altogether with your spoon and serve at once.

Indian Garam Masala Spice

I made the Indian version of of Creamed Spinach to have with our ham and yellow squash tonight.  I love creamed spinach so much I’m willing to eat it with so many different foods.  The flavors went quite nicely together!  Thought I’d re-share my Garam Masala recipe for anyone who loves Indian food as much as we do.    The Indian version of creamed spinach is quite unusual and very tasty.  Not hot/spicy, just aromatic with spices.  This spice blend has many uses.  Type “Indian” in the search box to see an array of Indian recipes here on my site to try this spice in. They are all tried-and-true recipes I’ve cooked many times. Give them a try some time!  I think you’ll be pleased if your an Indian food fan.

INGREDIENTS:

6 T. coriander seeds
3 T. cumin seeds
2 T. black peppercorns
1 T. whole cardamom pods (outer part and seeds inside)
5  small cinnamon sticks broken into small pieces
2  tsp. whole cloves
1  whole grated nutmeg (about 1 tsp.)

DIRECTIONS:  In a dry skillet, over low heat, heat the first 6 spices until they become very fragrant. This step is most important, so do not skip it or your results won’t be as good.  When fragrant, turn off heat and remove pan from stove.   Using a spice/coffee grinder (I have a cheap dedicated coffee grinder for spices only), grind all toasted spices to a pretty fine grind, but it doesn’t have to be as fine as salt.  Add grated nutmeg at this point.  When adding this spice to curry recipes, I once again heat the dry skillet and reheat these until they become fragrant and then proceed with whatever recipe I’m making. This is outstanding in all chicken, beef and fish curries.  It’s great on charcoal grilled, buttered  fish and chicken, too!

6  calories, 0.31 g.  fat, 1.1 g.  carbs, 0.6 g.  fiber, 0.23 g.   protein, 0.5 g. NET CARBS

 

 

Gosht with Pork (or lamb, beef, chicken)

The aromas in the kitchen when I make Gosht (a dish similar to Rogan Josh) evoke so many memories of Iran.  We had two different maids over the two years we lived there when I was growing up.  Fatimeh, a Muslim, did not eat pork.  However Pari, our first maid, was raised in a Christian orphanage and did cook pork regularly for us.  She made the best Gosht (stew) with eggplant and pork.  Fatimeh, of course, made it with lamb or beef.  I have even made this recipe with cut up chicken thighs and drumsticks and it, too, was yummy.  Your choice on the meat.  It’s the rest of what goes into the skillet that really makes this a wonderful, out-of-the-ordinary dinner.  If you want to cut carbs a bit, eliminate the dried prunes completely.  If you can afford the extra carbs, add a couple more of them!  They are delicious in this recipe and fruit is traditionally added to such stews in Iran! I serve this either on a bed of steamed cauliflower, or with rolled up Joseph’s Flax & Oat Fiber Lavash bread (1/2 sheet per person)

This recipe is suitable once you reach Phase 2 Atkins and Keto programs if the numbers fit your daily limits.

INGREDIENTS:

12 oz. lean pork loin (or lamb, beef or 4 chicken pieces), trimmed of fat

¼ c. coconut or olive oil

10 oz. eggplant, skin on, cubed large

4 Roma tomatoes, cubed large

1 c. homemade chicken broth

4 oz. sliced yellow onion

1 c. frozen spinach, broken apart

1 T. Rogan Josh spice powder (I order from Penzy’s on-line)

1 tsp. ground cinnamon

1 tsp. fresh ginger, minced

1 cl. garlic minced

1/2 tsp. coarse black pepper

1/4 tsp. salt

½ c. chopped cilantro

1 tsp. my Garam Masala

2 dried prunes (I use Delmonte brand), chopped

DIRECTIONS:  Heat oil over high heat in a wok or large skillet.  Add the eggplant to the pan and stir until it begins to brown.  Add the onion and meat and brown them as well.  Add all remaining ingredients and stir well.  Lower heat to low and simmer with lid on the pan for about 30 minutes.  Eggplant will break down and slightly thicken the stew, but if you like, you can slightly thicken with your favorite thickener.  Serve over steamed cauliflower or with ½ sheet of Joseph’s Lavash Bread per person.

VARIATIONS:  Add 1 c. heavy cream or if beyond Induction, 1/2 c. yogurt for a richer sauce.

Bacon-Onion Omelet

Haven’t made my hubby a true omelet in ages, so I whipped him up one this morning.  Had 4 slices of bacon left in my package and decided to go for simple, only adding green onion to the mix.  It was delicious and he was most pleased.  I’m not so fond of omelets as they are a lot more difficult to cook than simple scrambled eggs.  But for some reason, the hubs thinks they are better.  Problem for me is that in order to get all the egg fully cooked in the middle, you tend to have to overcook the egg surfaces that touch the pan.  I don’t like either issue if things go wrong.  But today’s omelet got done in the middle without terribly overcooking the outside.  This omelet is suitable for all phases of Atkins and other Keto diets.  It is also suitable for Paleo or Primal programs.

INGREDIENTS:

4 extra-large eggs, beaten

4 thick slices bacon, chopped

1/3 c. green onion, chopped

DIRECTIONS:  Beat the eggs in a small bowl and set aside.  Coarsely chop the bacon and onion and have at the ready.  Brown bacon over medium-high heat in a non-stick skillet.  Drain off most of the grease.  Add the onion and stir-fry the two together for a minute.  Spread the mixture out evenly in the pan and lower heat to medium.  Pour the egg mixture evenly over the bacon in the skillet.  Do not disturb the mixture.  As the eggs begin to cook on the bottom, tilting the skillet as you work, lift the edges of the “pancake” gently with your spatula to allow the raw eggs to roll underneath the cooked part of the pancake.  Repeat this around the edges of the “pancake” until all raw egg appears to have rolled underneath fro proper cooking.   Lightly scrape off any remaining raw egg with your spatula and let it get underneath to be sure it is all cooked properly.  Gently fold over about 1/2 of the pancake onto the other side with your spatula.  Cook 1 minute or so.  Gently flip the entire omelet over to insure any exposed, raw wet egg will get cooked.  Leave the finished omelet in this position for about 1-2 minutes.  Finally tip the skillet over your warmed platter and slide the omelet onto it.  TIP:  I hold the platter under very hot, running tap water a few seconds and dry off rather than heat in an oven.  The above photo uses a huge plate and is actually TWO servings.  I simply took the photo before cutting the omelet in half.

Jack Snack Nachos

My extremely popular recipe for Jack Snacks (millions of fans on Facebook)  I have just taken to a new level.  Last night my husband asked for some and begged me to put just a few refried beans on top this time.  So I did the nutritional math for a tiny bit of those added and the damage wasn’t as bad as I thought:  3.45 net carbs per piece (original version w/o beans is .08 NC per piece), but definitely higher than the inspirational recipe.

These were VERY good and I felt like I was eating a real Texas-style nacho.  I baked them  in two stages and let them get crisper than I usually do so they might get crisp enough for the final nachos to be manageable in our hands.  That surprised me as I thought the moisture in the beans might make them a bit soggy and require a fork to eat them.  But that didn’t turn out to be the case.  These are not suitable until you reach the legumes rung of Atkins Phase 2 carb reintroduction ladder.  Keto folks can have these if the numbers fit your daily limits.  These are not suitable for Paleo or Primal due to the beans.

INGREDIENTS:

1 recipe my Jack Snacks

½ c. canned refried beans, warmed a bit in the microwave for a minute or so

1/3 c. shredded Cheddar cheese

DIRECTIONS:  Preheat oven to 375º.  Per the Jack Snack recipe, place 1 T. of the shredded Monterrey Jack cheese on a parchment-lined baking sheet.  A total o f 16 little piles should be formed equally spaced apart.  Pop into the hot oven and bake about 10-15 minutes or until golden on top and around the edges.  Remove pan and dot each cheese portion with about ½-3/4 tsp. of the warm beans.  I used a tiny demi-tasse spoon to dip these up for portion control.  Do not spread the beans out lest the cheese bases get soggy!  Lay the jalapeno slice on top of each and sprinkle the 1/3 c. shredded Cheddar on top.  Pop back into oven and bake until the Cheddar has melted or about 7-10 minutes longer.  Remove from oven and cool a minute or so so the bases can form/crisp up for removing.  Serve and enjoy!

Sausage à la King

Here’s a new and scrumptious use for my new Mozzy Dough.  I had some hesitation on this creation when I started making dinner last night, but it came out truly delicious!  The hubs said I could “make this one again any old time”.  🙂  It was colorful, flavorful and just as tasty as it could be.  So simple to make, too.    This recipe is not suitable until you have reached Phase 2 Atkins.  It will be OK for Keto diets if you can fit the carbs into your daily limits; not suitable for Paleo.

INGREDIENTS:

2/3 recipe my Mozzy Dough

1/8 tsp. cayenne pepper (optional)

8 oz. smoked sausage, sliced

1 oz. each red, yellow and green bell pepper, cut up coarsely

1 plum tomato, seeded and cut up coarsely

3/4 c. heavy (whipping) cream

3/4 c. tap water

¼ c. white wine (optional, omit if still on Atkins Induction)

¼ c. parsley, chopped

¼ tsp. my Homemade Cavender’s Greek Spice Blend

¼ tsp. coarse black pepper

¼ tsp. onion powder

1/8 tsp. xanthan gum (or your favorite thickener)

DIRECTIONS:  Preheat oven to 350º.  Make up the Mozzy Dough per that recipe’s instructions, adding the 1/4 tsp. cayenne to the dry ingredients.  When dough is formed and pulling away from the bowl,  shape into a big log and cut off 2/3 of it for this recipe.  Place the rest in a plastic baggie and refrigerate/freeze for another use.  Divide dough into four equal portions. Press each portion of dough into four slots of a shortcake pan (if you have one), or you could use 4 mini pie pans, or four cups of a large muffin cup pan.  Press the dough evenly and up the sides of the slots a bit.  Bake at 350º for about 15 minutes or until puffed up and lightly browned.  Remove from oven until filling is ready.

For the filling, place the sausage in a skillet and brown over medium-high heat.  Remove with slotted spoon and brown the chopped peppers and tomato in the sausage grease until tender but not mushy.  Spoon onto a paper plate for now.  Remove most of the remaining grease from the pan.  Add to the skillet the onion powder, black pepper and Cavender’s blend.  Reduce the heat to low and add the parsley.  Add the water, cream and wine to the pan last.  Simmer a few minutes for flavors to blend.  Dust the xanthan gum in stages over the surface, stirring constantly for 3 minutes between additions, scraping down the sides of the pan frequently.  Do not overuse xanthan gum or your sauces will get slippery, which is quite off-putting.   When the sauce thickened to your liking, stop adding the thickener.  Invert the shortcake shells (don’t invert the shells if you used mini pie pans or muffin cups) each of the pastry shells onto plates, spoon about 1/2 cup of the sauce atop each and top with the sausage and pepper mixture.  Serve at once.

Ranch Pork Loin with Caramelized Onions

Although there are many Ranch pork recipes on the Internet, I put this together a little differently from most of them.  I put the seasoning on the meat surfaces, as most do, but then added a crunchy topping with even more seasoning.  The onion sauce was quite nice with these tender “chops” as well.   You can certainly use pork chops with bone-in rather than pork loin for this recipe, but boneless loin was what my husband brought home from the grocery store today.  This recipe is suitable for all phases of Atkins and Keto plans if the numbers fit your daily carb limits.

INGREDIENTS:

3  4-oz. pieces boneless pork loin

1 tsp. my Ranch Dressing Powder Blend

2 T. unsalted butter

3 oz. sliced yellow onion

Cheese Puffs (or 1/4 c. crumbs from any leftover low-carb biscuit or bread)

½ c. chicken stock (preferably homemade)

½ c. heavy cream

½ c. water (or white wine if you are past Atkins Induction Phase)

1/8 tsp. xanthan gum (only if needed to thicken to your desired level)

VARIATION:   In lieu of pork loin, use butterflied, boneless chicken breasts. 

DIRECTIONS:   Preheat oven to 350º.  Pound the 3 pieces of pork loin with a meat tenderizer on both sides.  Using only 1/2 tsp. of the Ranch seasoning, sprinkle over all sides of the meat.  In a hot skillet, melt the butter and add the meat, searing on both sides until golden.  Remove from the pan to a plate.  Add the sliced onions to the pan and saute until they caramelize.  Add the stock, cream and water and set the chops gently on top of the onion-liquid mixture.  Rubbing between your hands or in a food processor, crumble the cheese puffs or bread adding the remaining Ranch seasoning.  Sprinkle 1/3 of the seasoned crumbs on top of the meat portions.  Gently set the pan in a hot 350º oven to finish cooking for about 40 minutes or until the crumb mixture is golden brown.  Remove from oven.  Thicken the onion sauce with a couple light dustings of xanthan gum (only if you feel it is not thick enough already).  Serve at once with your favorite side or salad.

Crawfish Pies in Cheesy Pastry

This is one of my all-time favorite Cajun dishes!  I love these yummy pies best when I make them with crawfish for the rich, deep seafood flavor they bring to the final pies.  Typically they are made smaller when using high-carb flour pastry, but low-carb pastry is challenging to work with on such a small scale.  These were about 4½-5″ size, so definitely fork food.  If you choose to sub in shrimp in this recipe, your pies will definitely have a milder seafood taste than when made with the traditional “mudbugs” as they call them in the South.  These tasty pies can be enjoyed once you reach Phase 2 Atkins and can have this cheese-based dough.

This seafood filling freezes well (so does the raw dough), so if you need a smaller recipe of just 3 pies, split the filling in half and freeze in a plastic zip-bag for an easy meal in the future.  Use only half the dough for 3 pies and freeze the other half also in a plastic zip-bag.

INGREDIENTS: 

4 T. unsalted butter

2 oz. onion, chopped

½ c. each green bell pepper and celery, chopped (I used both red and green bell pepper in mine)

¼ c. each green onion and parsley , chopped

6 oz. crawfish tails (half pouch of the frozen tail meat)

2 cloves garlic, minced

½ tsp. my Seafood Spice blend

1/8 tsp. salt

6 drops Tobasco (more if you like things real spicy)

1/4 tsp. each ground thyme and black pepper

1/3 c. homemade chicken stock

¼ tsp. glucomannan powder, xanthan gum (or your favorite thickener)

VARIATION:  Sub in cooked, chopped shrimp for crawfish (6 large or 12 medium),  Sprinkle some shredded Cheddar Cheese on top at the last 10 minutes of baking.  

DIRECTIONS:  Melt the butter in a large skillet over high heat.  Sauté the celery, bell pepper, onion and garlic until all are tender.  Reduce heat to medium and add in parsley, salt, thyme, black pepper and Tobasco.  Stir to blend.  Add in the chicken broth and glucomannan or preferred thickener and stir until it has done its job thickening any liquid just a bit.  Remove from heat and cool while you make the pastry.

Line a baking sheet with parchment paper.  Preheat oven to 350º.  Make a recipe of my Mozzy Dough per that recipe’s instructions.  Divide ball of dough into 6 equal smaller balls of dough.  You can either make your crawfish pies half-moon shaped or square, your choice.  Roll each portion of dough out between two pieces of plastic wrap to about a 5″ circle or square.   Remove top piece of plastic wrap.  Spoon about ¼ c. of the crawfish mixture onto one side of each circle or square of dough, leaving an edge of free dough free of filling.  Using the bottom plastic wrap to help, lift the other half of the dough up and over the filling and lay on the free edge to form a top crust.  Press the crust edges together with the tines of a fork or your fingers so the filling hopefully won’t ooze out while cooking.  Again, grabbing the bottom plastic wrap as a helper, lift each pie onto the parchment-lined pan, removing the plastic wrap from underneath.  The pies will spread little during cooking so the 6 should fit onto your baking sheet OK.  Pop pan into preheated 350º oven and bake for about 20 minutes or until golden brown.  Serve at once with a crisp green salad.

Greek Chicken Wraps

I have always loved Middle Eastern food, probably because when I was 10-12 years old, my father was stationed in Teheran, Iran.  I just love Greek tabouleh and hummus and prepare these simple dishes often.  Last week we had some leftover grilled chicken and I decided to make a delicious wrap for our lunch.  We were eating these in under 30 minutes!  Due to the Joseph’s Lavash Wraps having flour product in it, this recipe is not suitable for Atkins Induction.

INGREDIENTS:

1  sheet Joseph’s Flax Oat Bran Lavash Bread

1/2 c. chunks or grilled chicken

8 black olives

4 T. hummus (commercial or my homemade for lowest carbs)

1/2 c. tabouleh salad

Dash salt

DIRECTIONS:   Cut lavash sheet in half and plate.  Spoon 2 T. hummus down the center.  Next spoon on about 3-4 T. tabouleh salad.  Place 1/2 c. chicken meat on top of the hummus.  Top with 4 sliced olives.  Roll tightly and serve.  I like to serve with ice cold tea.

VARIATION:    Make with grilled beef strips or ground beef logs seasoned with a Shawarma spice mix.

Silver Dollar Pizzas

When I was growing up my mother used to make us tiny pancakes she called Silver Dollar Pancakes, served up in a “Leaning Tower of Piza” stack.  My brother and I LOVED THEM!    They were just regular old pancakes made about 2½” round, but it got us excited about eating them when we were little.  Well, I made some real tiny pizzas in my muffin-top pan today and decided that would be a perfect name for these tasty  pizza bites.  I used my new Mozzy Dough, which held up nicely for eating with fingers.  They made a great lunch and they would make great party appetizers!   These delicious little gems are not suitable until you get fairly well into Phase 2 Atkins, as there is a little wheat product in Carbquik bake mix (in the dough).

INGREDIENTS:

½ recipe my Mozzy Dough

¼ c. Classico Spaghetti Sauce (Tomato & Basil) or other low-carb sauce

1/4 tsp. dried oregano leaves, crushed

12 slices pepperoni

12 black olives, sliced into 3 slices each

1 oz. green bell pepper, sliced into 12 thin pieces

½ c. shredded mozzarella cheese

3 T. shredded Parmesan

DIRECTIONS:  Preheat oven to 350º.  Make the Mozzy Dough per that recipe’s instructions.   Divide in half and wrap/store half for some other use.  Divide the half you are using into 12 equal balls (that’s about 1½ T. each ball of dough).  I used a non-stick muffin-top pan, but you could alternately use the bottom of non-stick muffin pan slots or a parchment-lined baking sheet if you don’t own a muffin-top pan.  Place a ball of dough into each of the 12 pan slots and press flat into a 2½” circle.  Top each with 1 tsp. of spaghetti sauce.  Sprinkle on the oregano.  Next place a slice of pepperoni on top of each Pizza.  Then place 3 slices of olive on each, followed by 3 pieces of bell pepper.  Finally, top each pizza with 1-2 tsp. mozzarella shreds, ending with a sprinkle of the Parmesan shreds.  Pop into 250º oven for 15 minutes or until lightly browning on the edges.  Remove, plate and serve warm.  These can be handled with your fingers, so the youngest kiddoes will love these and be able to eat them without dropping a bit on the floor or their lap.  Of course, they may have never seen a real silver dollar and wonder about the name.  Silver Dollars are rarely seen nowadays.  Perhaps you have one you can show them?

Peach Puffs

These are only three bites each, but boy are those three bites ever GOOD!  The hubs really loved these and I thought they were quite nice, too, and not too sweet!  Most of my readers know I’m not a big sweets eater.  I noticed a lonely can of juice-pack peaches in my pantry after lunch today and knew I had half a recipe of my Mozzy Dough already made up in the fridge.  A light-bulb moment for sure.  I popped out my muffin top pan and created these tasty treats.  Only 84 calories each and 1.79 net carbs.  I made the mistake of choosing powdered erythritol for my cinnamon topping and it clumped even after sifting, so next time I’ll use exclusively granular erythritol for my topping.  These are suitable once you get to the fruit level of Atkins carb reintroduction Phase 2.

INGREDIENTS:

1/2 recipe my Mozzy Dough (omit garlic and onion powders)

6 slices canned peaches, sliced laterally in halves, making 12 long pieces

2 T. granular erythritol (or equivalent sugar sub of choice to equal 2 T. sugar)

1 tsp. cinnamon

2 T. butter

1 T. additional granular erythritol + 1/2 tsp. cinnamon for topping

DIRECTIONS:  Preheat oven to 350º.  Make the Mozzy Dough per that recipe’s instructions.  Divide the large ball of dough in half and refrigerate or freeze as you won’t be using all of it here.  Divide your remaining dough into 12 equal balls (about 1 T. of dough each) and press each ball with your fingers into the slots of a muffin-top baking pan.  If you don’t own one, use a parchment lined baking sheet and press the balls of dough into 2½” flat rounds of dough.  Take each peach slice and slice it length-wise to make 12 thinner pieces of peach.  If you don’t do this, most canned peach slices are too bulky to wrap in such a small bit of dough.  Lay a strip of peach down the center of each ring of flattened dough.  Sprinkle the teaspoon of cinnamon down the awaiting peach slices.  Dot each of the 12 peach strips with a very small dot of butter (about 1/4 tsp.).  Sprinkle 2 T. erythritol total evenly down the 12 peach strips.  Now you’re ready to “wrap” them up.

Using the tines of a fork, lift each flap of dough over the peach strip, pinching the dough slightly together to form a crude seam.  This is tricky, but perfection isn’t required and I WAS able to seal each.  I then pressed the seam with the back of the fork as well.  Pop pan into hot 350º oven and bake for about 15 minutes or until golden brown.  Stir the additional 1 T. erythritol and cinnamon in a cup and sprinkle atop each puff.  Remove puffs from the pan with a knife tip or spatula, plate and serve warm.

Montreal-Sriracha Pot Roast

We fixed a delicious pot roast tonight!   Best one I’ve made in quite awhile.  This one is a tad spicy, but we both LOVED it!  It cooked up tender and the pan juices and slow roasted onion were just divine on the meat.  This recipe is suitable for all phases of Atkins and Keto diets.  This one you just pop in the oven and check on it for a quick baste once an hour.  Love dinners that practically cook themselves.  This meat is not what I would call excessively spicy.  It merely gives a tingle on your tongue as you enjoy it.  I, for one, do not like excessively spicy food.  It might be too spicy for children, however.  Use the Sriracha as you think fit for your family.  But I will say the Sriracha is key to the flavor profile of this meat.

INGREDIENTS:

1   3½ lb. chuck roast

1 tsp. my homemade Montreal Steak Seasoning

1/4 tsp. each onion and garlic powder

1 T. Sriracha Chili Sauce (use less if you’re sensitive to spicy food)

2½ oz. red onion, sliced real thin

3 T. unsalted butter

DIRECTIONS:  Preheat oven to 350º.  Stir the Montreal Steak Seasoning, onion and garlic powder on a paper plate or in a small bowl.  Sprinkle both sides of the roast with the spices and place in a 9×13 baking pan.  Sliver the onion quite thin and spread the threads of onion all over the top of the roast.  Drizzle about 1 T. Sriracha Sauce in a zig-zag fashion over the top of the roast.  Dot the top with butter.  Pop pan into preheated 350º oven for about 3 hours, opening at 1 hour intervals to baste.  Using a kitchen brush, drizzle pan juices over the meat gently so as not to disturb the roasting onions on top.  If all have evaporated during cooking add a little water to the pan to deglaze those tasty brown bits on the pan.  After 1½ hours cooking, lower oven to 325º and finish cooking.  Meat should be thoroughly done and tender at 3 hours.  Remove and slice into 7 servings.  Serve with your preferred sides.

Decided to try my hand at one of my pastry favorites: lemon curd.  I grew to love this scone & pastry topping while on an extensive six-weeks trip through Britain in the 80’s.  I have since modified my recipe of the 80’s to be Atkins friendly.  Had it on a Muffin in a Minute for breakfast and man was it ever good!  This also makes a good cream filling between layers of vanilla cake or pound cake or for lemon mini-tarts.  I love it on a hot biscuit as well!  🙂  As lemon and lime juice is limited during Induction to 3 T. per day, this recipe is only suitable for Induction if you don’t over indulge.

INGREDIENTS:

3 eggs, whisked well

1 T. liquid Splenda (or other sweetener to equal 1 c. sugar)

½ c. fresh lemon juice

1 T. lemon peel, grated

¼ c. unsalted butter

DIRECTIONS:  In a saucepan, whisk eggs, add sweetener, lemon juice and peel.  Turn fire to medium-low and add butter.  Cook, stirring constantly for about 10-15 minutes until thickened.  Pour into jar and chill/store in refrigerator.

“Pasta” Fagioli Soup

This soup was super yummy at lunch today.  Saw the can of Eden Black Soy Black Beans and knew I had some bulk pork sausage in the refrigerator.  Standing in for the pasta in classic Pasta Fagioli Soup, is thinly sliced yellow summer squash.  If you are at Pre-Maintenance or Maintenance levels of Atkins, instead you could break up one serving (2 oz. uncooked) Al Dente brand Carba Nada Egg Pappardelle noodles in place of the squash for a more authentic Italian soup.  Doing so adds about 2 net carbs per serving, whereas the squash only adds about 1/2 net carb per serving.   Another option would be to chop up some of those tofu-based Miracle Noodles (if you like them), for virtually no extra carbs or calories!  The squash, I have to admit, was tasty in this as well as a colorful stand-in for traditional pasta in pasta fagioli, but that’s your call.  This recipe, as written, is suitable once you get well into Phase 2 Atkins (remember, it has beans in it).

INGREDIENTS: 

2 T. bacon grease

2½ oz. onion, chopped

1 c. celery, chopped

4 oz. pork breakfast or Italian sausage, shaped into mini meatballs

2 oz. cured ham, chopped (or 4 slices bacon)

1½ c. homemade chicken broth

4 c. water

2 Roma tomatoes, cut in chunks

1 c. cilantro, chopped (use 1/2 c. parsley if not a fan)

1 medium yellow summer squash, cut lengthwise and then sliced

¼ c. rice wine vinegar or red wine vinegar  (optional, but really adds a lot)

½ tsp. coarse black pepper

¼ tsp. each dried oregano and basil

1 can Eden Soy Black Beans (not the same as high-carb black beans!)

Optional:  ½ c. low-carb pasta of your choice

DIRECTIONS:  Heat bacon grease over high heat and sauté onion and celery until translucent.  Add mini sausage balls and ham/bacon to pot and stir very gently to cook the sausage without breaking it apart.  Add all remaining ingredients to the pot.  There’s enough salt in the ham and sausage I don’t think you’ll need to add extra salt to this soup.  Add 1/2 c. small macaroni noodles (if using).  When the soup comes to a light boil, lower heat to a simmer.  Simmer until squash and noodles are tender, or for about 20-25 minutes.  Serve with your favorite low-carb garlic bread and a nice green salad.

Eggplant-Sausage Rollatini

These little Italian delights were fun to make and absolutely delicious!  They would be a great dinner party choice as you can make them ahead so you can just pop them into the oven when guests arrive.  They bake themselves so you can enjoy visiting with guests.  They have a rich, creamy, cheesy lasagna-like flavor with a little spinach thrown in for some added nutrition.  I served this with a lovely green salad and two filled us right up!  Vegetarians can leave the meat out entirely and this is still a delicious dish.  🙂  Suitable for all phases of Atkins and other Keto diets.  Paleo followers will need to leave the cheeses out.

INGREDIENTS:

1  medium (12 oz) eggplant

¼ c. olive oil

3  links Italian sausage, casings removed (4″ links)

3/4 c. Classico Spaghetti Sauce with Basil (or other low-carb sauce)

1 oz. baby spinach leaves

4 oz. cream cheese

3/4 c. shredded Mozzarella cheese

1/4 c. shredded Parmesan cheese

1 Roma tomato, sliced into 8 thin slices

1/4 tsp. crushed dried basil leaves

DIRECTIONS:  Preheat oven to 375º.  Cut the stem and bottom bits off the eggplant and slice lengthwise into 8 long 1/4″ slices.  Brush both sides with the olive oil and place on parchment lined baking sheet. Pop into hot oven and bake 10-15 minutes.  Turn and bake on the other side for 15 minutes.  You’re not looking for brown here, just softened (partially cooked).  🙂  Remove and cool for handling.  Lower oven to 350º.  Spoon 4 T. of the spaghetti sauce onto a ceramic baking dish and spread thinly to prevent sticking.

While the eggplant is baking, remove casings from sausage and using your hands as with meatloaf, mix the meat up into a single log.  Divide the log into 8 equal portions and shape into smaller thumb-size logs.  Lightly brown them in a skillet and then remove from heat.  When eggplant has cooled enough to handle, place a log of sausage, 1 T. cream cheese, 4-5 baby spinach leaves, a tiny bit of the Mozzarella (about 2 tsp.) on one end of each eggplant slice.  Carefully roll them as tightly as you can and place seam down into the baking dish.  Spoon the remaining spaghetti sauce evenly over the tops of the rolls.  There won’t be much sauce, but these are so rich, you won’t need any more!  Sprinkle the Parmesan over the tops of the rolls.  Next sprinkle remaining mozzarella cheese on top.  Slice the tomato into 8 thin slices and place one on each roll and dust with the dried basil leaves.

Cover with foil and bake in a 350º oven for 30 minutes.  Remove foil and baked about 15-20 minutes more or until bubbly and cheese appears to be all melted on top.  Dip up with a spatula so as to get the sauce off the bottom of the pan with each serving.  Serve with a nice green salad and ENJOY!

Einkorn RWS Biscuits

I just whipped up a batch of these this morning.  They’re my go-to recipe now.  These biscuits are the ones I’m most proud of in 14 years of low-carb biscuit experimentation.  Being a southern girl, I just have to have some good biscuits a couple times a month.  My trials of low-carb biscuit recipes I found around the internet have so often come out overly dry, hard as a rock, crumbled up on my plate, tasted like baking powder, were too cheesy, too coconut tasting…….in other words, disappointing.

Well, I finally achieved a biscuit that even my husband says tastes and has the mouthfeel of a real flour biscuit.  Soft, and with no funny tastes.  🙂   One added note:  using mozzarella in lieu of the Monterey Jack cheese in these will make the cheese flavor come through more, just to let you know.  I definitely prefer the jack cheese taste here as it is more neutral.    

Einkorn flour is ground from an ancient strain of wheat that is not genetically modified like most modern wheat.  I think the Einkorn and the Resistant Wheat Starch (RWS) are what make this recipe stand out amongst all my others.  I order my RWS from Netrition.com and the Einkorn flour direct from Jovial Foods website.  These biscuits are not suitable until you near goal weight as there is real flour in them, so wait until Pre-Maintenance phase of Atkins to enjoy these.  

If you prefer not eating wheat at all, you will want to try instead my Peggy’s Fluffy Biscuits.  

INGREDIENTS:  (all available at Netrition.com and elsewhere on the internet)

2 c. my homemade Einkorn Bake Mix

½ c. Monterey Jack Cheese (or mozzarella), shredded

2 large eggs, beaten

4 T. resistant wheat starch (or ¼ c. more bake mix if unavailable)

¼ c. cream (or milk)

about ¼ c. water, added last and slowly

DIRECTIONS:  Preheat oven to 350º.  Place parchment or a silicone sheet on 13×15 baking pan and set aside. In a large mixing bowl, measure out 2 c. my bake mix.  Though it helps to let the mix come to room temp, you still need to rework shortening lumps with a fork until the mix is again the texture of cornmeal.  Add all remaining ingredients but the water and stir well.  Add water slowly but only enough to form a thick dough.  Let dough sit on counter 2-3 minutes to set up a bit. 

Dip up 7 equal portions (about ½ c. batter each).  With floured hands, form into balls and set them on pan spaced evenly.  Slightly press to a height of 1″  (will be around 2″ diameter).  Pop pan into 350º oven for 15-17 minutes or until dry to touch in center and lightly browned on surface.  These rise up nicely.   🙂  Serve hot with butter and your favorite jam.  Leftovers should keep nicely for a week in your refrigerator in a zippered plastic bag or for a month in the freezer.

Ham and Irish Porter Cheese en Croute

I’ve begun experimenting with a dough that is somewhere between the Flathead Pizza Crust recipe on the Diet Doctor’s website and Jennifer Eloff’s Miracle Dough recipe.  But the final result is a little easier to handle, roll, and manipulate than either of those recipe, in my experience.  This dough has good elasticity and flavor and numerous possible applications.  I can see I’ll be using this dough recipe a lot.  Today we were also trialing a new cheese for us, Irish Porter Cheese we found at Sam’s Club.  It is a white cheddar chunked up with a surround of dark Porter beer.  Has a nice taste cold and melted nicely for our lunch today.  This tasty recipe is not suitable until the later part of Phase 2 Atkins as Carbquik has some flour product in it but it sports respectable numbers for Keto followers.

INGREDIENTS:

1 recipe my Mozzy Dough

8 oz. cured ham, cut into long pieces (about ½” x 3″)

8 oz. Irish Porter Cheddar Cheese, cut into long pieces (about ½” x 3″)

DIRECTIONS:  Slightly brown the ham sticks in a skillet with a dab of bacon grease.  Remove from heat and set aside.  Make the Mozzy Dough by that recipe’s instructions.  In the bowl, portion it into 8 balls of dough.  Preheat oven to 400º.  You want a really hot oven so the dough will brown quickly and the cheese has a fighting chance to stay inside the “croute”.  Tear off a piece of parchment and set on your counter.  One at a time place, place a ball (1/8 of the dough) of dough on the parchment.  Using your fingers, press it into an fairly thin oval shape about 5″ on the long measure.  Place a stick each of ham and cheese atop the oval of dough the long way.  Roll the dough (using the parchment to help lift it to start rolling).  Pinch the dough ends well to seal the contents tightly inside.  This step is crucial or the melting cheese will all ooze out during cooking.  Place the logs seam down on a non-stick or parchment-lined baking sheet.  Repeat until all 8 balls of dough have been filled and rolled.   Pop the pan into a hot 400º oven and bake for 15 minutes or until lightly browned as shown.  Remove and serve at once.

VARIATION:  After they cool off a bit, slice the “logs” up into bite-size pieces for serving as appetizers for your parties.

Italian Chicken Tart

Used in a pizza-like Italian Chicken Tart

I’ve begun experimenting with a dough that is somewhere between the Flathead Pizza Crust recipe on the Diet Doctor’s website and Jennifer Eloff’s Miracle Dough recipe.  But the final result is a little less delicate when rolling/handling.  This dough has good elasticity and flavor and numerous possible applications.  I can see I’ll be using this dough recipe a lot.  I have made a couple minor changes since my original version, noted below in ingredients, reflected in the revised nutritional stats.

TIP: As a time saver, I’m now making up 10 batches of the dry ingredients pre-measured on paper plates. Then I fold and pour each into a sandwich bag and store the bags in a shoe box in my pantry. Very convenient…..as then all I have to do is grab a bag, melt the butter, add the beaten egg, melt the cheese and make my dough ball. So easy that way. I store the paper plates and baggies and re-use for the next batch. 🙂

INGREDIENTS:

1½ c. shredded mozzarella cheese

1 T. cream cheese

1½ T. melted butter (slightly less than my original recipe)

1 egg, beaten

½ c. Jennifer Eloff’s Gluten-Free Bake Mix

½ c. Carbquik (or another ½ c. gluten-free mix)

1 T. oat fiber

3/4 tsp. psyllium husk powder (for rolls, only use 1/4 tsp)

Dash each onion and garlic powder (omit for dessert applications)

DIRECTIONS:  Measure out all dry ingredients in small bowl, stir well and set aside.  Place mozzy cheese and cream cheese in glass or ceramic bowl and microwave on HI for about 1-1½ minutes to melt it.  Remove and stir quickly with a fork.  Add the egg and melted butter and stir again.  Quickly pour in the dry ingredients and stir quickly with a fork to form a congruous ball of dough, making sure to get it all off the sides of the bowl.  Knead or stir a few minutes to be sure all is uniformly mixed.  Proceed to make a 12″ pizza crust (moisten hands with water to avoid sticking to fingers), pie crust, hand pies, sweet filled pastries, dinner rolls (omit onion/garlic powder for sweet applications) or whatever application you dream up.  For pizza bake at 350º until dry to touch.  Remove, slide parchment paper out from under pizza, add toppings and bake 15-18 minutes longer to desired brown level.

CORRECTED NUTRITIONAL INFO:  Makes enough for a large pie-crust with lovely fluted edge, 4 hand pies, a small 12″ pizza or 7 dinner rolls or mini pizza rounds.

Italian Meat Stacks

This quick lunch or dinner is sure to please any cook and the entire family.  It’s easy and goes nicely with a green salad.  It’s what’s for dinner tonight at our house.  This recipe is Induction friendly!  A piece of garlic bread made with any of my basic bread recipes would be delicious with this.  This recipe is for one individual serving, so increase if you need to make more servings.  This is the kind of dish that encourages me to always keep a couple jars of low-carb spaghetti sauce in the house for, as you use so little at a time here.  Hardly worth cooking up a special batch of sauce from scratch just for a small amount.  I use what I need, keep the remaining in its jar in the freezer and just defrost a bit int he microwave when a dab is needed.

VARIATION:  Substitute a slice of butter-seared eggplant for the spinach.  Or Substitute lamb for the beef, feta cheese for the mozzarella and chopped parsley for the fennel for a Greek version. 

INGREDIENTS:

5 oz. raw ground meat (will likely cook down to 4 oz.)

<Pinch each oregano, crushed fennel seed, onion powder, garlic powder

1/3 c. cooked, seasoned fresh or frozen spinach

¼ c. low-carb spaghetti sauce (I use Belo Vita)

1 oz. grated mozzarella (or 1 slice)

1½ tsp. grated Parmesan cheese

DIRECTIONS: Place the spinach in water to cover, season and cook just until tender.  While it is cooking, shape meat into nice round patty and place in skillet.  Sprinkle with 1/2 spices and brown on one side on medium-high heat.  Turn meat and sprinkle with remaining spices.   When fully done, place meat patty on serving plate.  Top with 1/3 c. cooked spinach, well-drained and spread out evenly.  Next top with sauce.  Then sprinkle on the Parmesan and finally the mozzarella.  Microwave covered at about 70-80% power for just 1-2 minutes to melt cheeses, as meat is fully done already.  Serve with salad and slice of low-carb garlic bread.

Ham-Tuna Cheesies

I’ve posted my Tuna Cheesies , a long-time family favorite snack, some time back.  A number of you have tried and loved them.  Those are made and served on low-carb crackers.  Today for lunch, I wanted to “push the diet envelope” and take these to an even lower carb level and try them without actual crackers!  I had a piece of cured ham leftover from breakfast, so I decided to make my “crackers” from that fried ham.  What a GOOD IDEA that turned out to be!  At first, I was not sure ham and tuna would go well together together.  Well, I’m here to tell you they are wonderful together!  The cheese rounds out the flavor profile quite nicely!  Sometimes cooking whims really do work!  If you’ll let these slightly cool a bit before serving, they are easier to lift off the pan with a thin spatula and easier to hold in your hand for eating.  Plus…….you won’t burn the top of your mouth with the very hot, gooey cheese.  These tasty snacks are suitable for all phases of Atkins, Keto diets and for those Primal Blueprint folks that consume the occasional dairy.

VARIATION:  Use diagonally sliced pieces, pre-browned smoked sausage in place of ham.

INGREDIENTS:

4 oz. fried, cured ham

4 oz. (slices) American Deluxe or Cheddar cheese, shredded

½ small pouch (1.3 oz) water-pack tuna

Dash onion powder

Dash cayenne pepper

1/8 tsp. Worcestershire sauce

2 T. softened butter

DIRECTIONS:  Preheat oven to 350º.  Slice ham off into ¼” slices and then cut those into 16 pieces.  Place them on a parchment-lined pan with ample space between them, as the cheese topping will sprawl beyond the ham bits during cooking.  Place remaining ingredients in a small bowl and mix well with a fork until the butter is binding the cheese and tuna together nicely.  Spoon or fork about 1 T. of the mixture onto each slice of ham, evenly distributing any that is left over.  Slightly press the mixture down with fingers or your fork if it seems a bit “loosey-goosey”, as I call it when a mixture isn’t cohesive enough.  Pop the pan into a hot 350º oven for about 10 minutes or just until the cheese-tuna mixture melts.  It will spread over and beyond the ham most likely.  Remove pan from oven and cool a couple minutes.   Using a thin metal spatula, remove the cheesies from the pan to a serving platter and serve at once.
